Spinach Dip with Shamrock Chips
A super quick and easy St Patrick’s Day appetizer, this Spinach Dip with homemade Tortilla Chips is a fun addition to your St Patrick’s Day celebrations!
St Patrick’s Day Appetizer Recipe
Spinach dip is always a classic – and being naturally green, it’s a perfect choice for St Patrick’s Day.
But you can’t serve spinach dip with just anything on St Patrick’s Day… or at least, I can’t. I had to add a bit of extra festivity to this super simple appetizer with some homemade “lucky clover” tortilla chips.
Of course, you can just serve this delicious and healthy spinach dip with regular tortilla chips, crunchy veggies, or cut-up bread cubes. There are plenty of green veggies that would add to the theme: broccoli, sugar snap peas, celery, green bell peppers, etc.
I also have a more indulgent hot spinach dip recipe, but I went with this lightened up version today.
Now, you can make your tortillas from scratch – but I took a slightly easier route by grabbing those naturally green spinach tortilla wraps from the grocery store.
If you have a shamrock or clover cookie cutter (or want to order one), that’s obviously the easiest method, but when I made these I only had a heart cookie cutter so I’m going to show you how to use a heart shaped cookie cutter to make four leaf clovers.
While I seasoned my tortilla chips simply with olive oil, lime juice and sea salt, you can add on any seasoning you desire for a fun twist.

How to Make Spinach Dip and Tortilla Chips
First, cook your spinach dip so that it is cooled in time to make your spinach dip.
Place 1 Tablespoon olive oil in a frying pan or skillet over medium heat. Add the spinach and cook until wilted, about 2-3 minutes.
Transfer the spinach to a small container for refrigeration.
Allow the spinach to cool in the fridge as you prepare your tortilla chips.
Next, repare your tortilla chips by cutting out shamrock or clover shapes from the pre-made tortilla wraps.
Preheat oven to 350ºF.
Lay the cut out shamrocks on a lined baking sheet and brush with oil or melted butter, then sprinkle with salt.
Bake the tortilla chips for 5-8 minutes, until they begin to look golden on the edges.
If desired, spritz some lime juice on the tortillas while they are still warm.
For the spinach dip, combine the remaining oil, cooled spinach, cream cheese, yogurt, garlic, basil and salt and pepper. Taste and adjust to your personal preferences.
