How many spinach dip recipes is too many? Because this hot & cheesy spinach dip recipe is the third spinach dip recipe I’ve posted in less than a month – and I haven’t even gotten to my bruschetta-style spinach and artichoke dip… or spinach dip stuffed garlic bread…
Okay, I may have a problem.
If you can call a love affair with spinach dip a problem.
Which clearly, I don’t.
This quick and easy, triple cheese spinach dip is perfect for a party or as an indulgent appetizer (carefully balanced with a healthy and cheese-free meal, of course).
I use a ton of spinach and artichokes (and sometimes tomatoes and sweet peppers) to somewhat balance out the cheese, so I definitely don’t feel bad in indulging in this delicious spinach dip when a good excuse comes up. (And bonus – artichokes actually help lower your cholesterol!)
Serve it with plenty of dippables – anything from nachos, to toasted pita chips (homemade is always best), to cut up slices of baguette, or even fresh veggies.
To make our own pita chips, I use a pizza cutter to cut naan bread into triangles, drizzle with a bit of olive oil, sprinkle them with whatever seasoning seems like it will work well with what we’re serving, and bake them at 350F for a few minutes. (And as my daughter will tell you, I never make enough. I always think I’ve made enough, and yet somehow we still seem to always run out before we’re satiated.)
Ingredients for Hot Spinach Dip
- 2 Tablespoon olive oil
- 5 cups spinach
- 1-8oz package cream cheese, softened
- 1/4 cup mayonnaise
- 1/4 cup Parmesan cheese, grated or shredded
- 2 cups cheddar cheese
- 3 cloves garlic, minced
- 1-14oz can artichokes, optional
- Salt and pepper, to taste
Tip: use fresh spinach for best results.

How to Make a Hot Spinach & Artichoke Dip
Preheat oven to 350F
Place the olive oil in a frying pan over medium heat.
Sautee the garlic and spinach until the spinach is completely wilted and the garlic is very fragrant, about 3-5 minutes.
Stir together the cream cheese, mayonnaise, Parmesan and 1 cup of the cheddar cheese. Add in the spinach, garlic and artichoke hearts. Taste and season.
Spoon the dip into a oven-proof serving dish and then cover completely with the remaining cup of cheddar cheese.
Bake for 20-25 minutes, until cheese is golden and bubbly.
