Today’s salad dressing was one of those recipes that came about by playing around in the kitchen. I wanted a spicy and juicy salad dressing for a pasta salad and stumbled upon a delicious concoction that just needed to be shared with the world!
This easy mango salad dressing is made with just 5-6 ingredients and is perfect whether you’re serving it on a pasta salad (as I did) or enjoying on a leafy green salad… or it can be enjoyed as a dip for veggies or a sauce for proteins like steak, chicken or fish.
I always have fresh or frozen mangoes on hand because it’s one of my daughter’s favorite fruits, but in a pinch you can use peaches (and maybe even pineapple) to make this simple salad dressing.
How to store this mango salad dressing: store in a sealed or covered jar in the fridge for up to a week.

How to Make Spicy Mango Salad Dressing
Chop up the mango and place it in a powerful blender and puree. Add a bit of milk or water to help achieve a smooth consistency, if needed. (You can reserve a bit of the chopped mango to mix into the pasta salad if you’d like.)
In a small bowl, combine the mango puree, mayonnaise, red pepper flakes, salt & pepper. Mix completely and taste. Adjust the pepper flakes, salt and pepper to your preference.
