Today’s Salmon with a Creamy Dill Sauce recipe is quick and easy enough for a busy weeknight while being elevated and fancy enough to serve for a special occasion – oh, and did I mention, it’s divinely delicious!

Salmon with Dill Sauce Recipe
This Salmon with Dill Sauce recipe is one of those recipes that whenever I make it for a friend, they demand that I give them the recipe. (OK, I’ve made it for two friends – but both demanded it, so true statement.)
The salmon is baked to tender, flakey perfection while the light, tangy dill sauce takes mere minutes to prepare. The creamy dill sauce is not overly rich, so you don’t feel heavy afterwards, but it’s decadent enough to easily pass for a restaurant-quality sauce.
By using sour cream to make the sauce, we skip the technical cooking processing of cooking heavy cream to make a thickened sauce, which can be a bit tricky on a busy night with little ones making demands on your attention.
If you end up with extra sauce, it’s wonderful for dipping veggies in or use it to coat some cooked pasta for a quick and easy pasta salad – or similarly, an easy potato salad. (I also love it with some leftover roast chicken.) In fact, maybe you should double it so that you can definitely have some leftover!
Salmon with Dill Sauce Variations:
- blend 2/3 cup of cottage cheese in a smoothie-style blender and use in place of the sour cream and mayonnaise for a healthier, protein-packed variation
- alternatively (to the above), you can use yogurt to make the sauce
- not a huge fan of dill? you can use parsley, basil or tarragon to make this recipe, instead
- instead of salmon, you can make this recipe with cod, trout, tilapia, sole, etc.
- give the sauce a bit of extra zing with a bit of horseradish or pickled capers
- to make this recipe dairy-free or kosher, use dairy-free (vegan) sour cream and mayonnaise to prepare the sauce
Instead of baking the salmon, you can prepare it in a few different ways:
- Air-fryer variation: cook salmon at 400F for 8-10 minutes.
- Pan-fry variation: cook salmon for 4-5minutes per side over medium heat
- Grill variation: grill salmon for 8-12 minutes
How to tell if salmon is cooked through: Salmon should be cooked to an internal temperature of 145F. The easiest way to ensure that salmon is cooked through is to use a meat thermometer and insert it in the thickest part of the salmon.
However, you can also visually tell when salmon is cooked: the fish will change color along it’s sides, changing from a bright pink (indicating rawness) to a pale pink, starting at the edges and moving towards the center.
If small beads of white protein start to appear along the sides, the salmon is bordering on being overcooked and should be removed from the pan immediately. Overcooking salmon will cause it to be dry and tough – it should easily flake apart when pressed with a fork and have a juicy, buttery texture.
How to store salmon with dill sauce: After cooking, the salmon can be kept in an airtight container in the fridge for up to 4 days or frozen in an airtight freezer container for up to 3 months. The dill sauce should be stored separately (in the fridge) and used within a week. I do not recommend freezing the sauce.

How to Make Salmon with Dill Sauce
Preheat oven to 350F
Oil a casserole dish and place the salmon fillets within it, spacing out as much as possible.
Season the salmon with salt and pepper.
Bake salmon for 20 minutes or until the proteins just start to come to the surface and the flesh flakes easily with a pork.
Meanwhile, prepare your lemon-dill sauce.
Combine the sour cream, mayonnaise, garlic, lemon zest, lemon juice, mustard and fresh dill.
When the salmon is finished baking, remove carefully from the casserole dish and serve with 2-3 Tablespoons of the dill sauce.
