Pumpkin Hummus
I was talking to a friend about how much I love pumpkin in savoury dishes, like pumpkin curry, when she pointed out that I haven’t shared a single savoury pumpkin recipe on here! Well, I had to rectify that immediately with this delicious Pumpkin Hummus.
The credit for this pumpkin hummus should actually go to Ella – the lover of all things pumpkin spice. I was asking what she wanted to dip her veggies in for school and she insisted on pumpkin dip!
A sweet dip for veggies sounded gross, so I thought maybe we could make a savoury pumpkin dip using roasting spices instead of pumpkin spice. You could definitely add a dash of cinnamon or allspice to this dip, but I just stuck with traditional hummus spices this time around.
This would make a great healthy dip to offer guests, or have as an alternative to a more indulgent dip or appetizer at a party.
How to Make Pumpkin Hummus
First, gather your Pumpkin Hummus Ingredients:
- 1 ½ tsp minced garlic
- 1 can chickpeas (15 oz)
- 1 ½ C pumpkin puree
- ½ tsp salt
- 1 tsp ground cumin
- 1 lemon, juiced
- 1 TBSP extra virgin olive oil
Note: you can boil or soak your own dried chickpeas for this recipe, but I made it with canned chickpeas since I was making her lunches right then.
Using a food processor add your drained and rinsed chickpeas, pumpkin puree, salt,cumin, lemon juice, and extra virgin olive oil.
Process until completely blended.
Serve immediately or cover and store in the refrigerator.
