Soft Pumpkin Chocolate Chip Cookies Recipe

My daughter and I have completely opposite tastes when it comes to desserts.

She loves fruit-based desserts with strawberries or raspberries, while I want all things chocolate and caramel. She’s all about that dark chocolate life, while I prefer white or milk chocolate. And this girl cannot get enough pumpkin spice – while I tend to opt for plain cinnamon treats, like our snickerdoodle cookies or a homemade cinnamon dolce latte.

But these pumpkin chocolate chip cookies we both agreed were complete winners – so much so, that right after we polished off our first successful batch, I happily gave into her request to bake another!

It took me a few attempts to get this recipe just right in terms of flavor and texture. I didn’t want crispy chocolate chip cookies, I wanted soft pumpkin chocolate chip cookies that still had that toothsome texture of a fresh bakery cookie without bordering on the cake-like texture of a whoopie pie. I wanted the flavor to be amazing and warming, without being overpoweringly spiced, and I wanted the pumpkin and chocolate to balance each other out perfectly. (Ever since making my Magical Pumpkin Cake, I am a diehard fan of the chocolate + pumpkin flavor combination.)

Using melted butter and more white sugar than brown sugar ensure this cookie has a chewy (not cakey) texture, while the fresh pumpkin puree and a good amount of leavening ingredients give it the perfect amount of softness while ensuring you don’t get flat, crispy cookies. Refrigerating the dough before baking it is also a key step in this recipe’s success.

I personally like making these pumpkin chocolate chip cookies with browned butter rather than just melted butter because it makes the butter flavor more pronounced, which serves to complement the pumpkin and chocolate flavors. To make browned butter, cook your butter in a saucepan over medium heat past the point of just melting it. Keep heating the butter until all those little white milk solids start to caramelize and turn golden brown, and then remove it from the heat and allow to cool before proceeding with the recipe.

You can also swap out the milk chocolate chips for white chocolate chips, dark chocolate chips or even use different fall-inspired mix-ins like dried cranberries, pumpkin seeds, etc.

You can freeze excess cookie dough by storing in an airtight freezer bag or your favorite freezer containers for up to three months. (This set of freezer containers is a crazy bargain.) For best results, scoop or roll the dough into balls before freezing. Let the dough thaw completely before baking.

How to Make Pumpkin Chocolate Chip Cookies

In a large bowl, beat together the melted butter, white sugar and brown sugar for 2 minutes.

Beat in the pumpkin puree until just combined.

In a small bowl, whisk together the dry ingredients.

Beat the dry ingredients into the wet ingredients in two additions, then mix in the chocolate chips.

Refrigerate the dough for 1 hour.

Preheat oven to 350F

Line two baking sheets with parchment paper or silicone baking mats.

Use a cookie scoop to portion out the cookie dough. Slightly flatten with the back of the scoop.

Bake for 10-12 minutes, until cookies appear set.
