Pink Hot Chocolate Recipe

As Ella and I are planning her first trip to Paris, we’ve been re-reading Eloise Goes to Paris over and over again.

The first time I read the book, I’ll be honest – I cringed at the lack of grammar and the use of “Oh my lord,” not to mention the casual mention of martinis. However, now that I have a 7 year old, I see a lot of similarities between the enthusiastic way that my daughter speaks and Eloise’s run-on sentences. We have a lot of fun reading the Eloise books out loud and imaging what it would be like to live in a hotel.

Eloise famously lives in the Plaza Hotel in NYC and now the hotel has an Eloise suite and Eloise packages that can be purchased by guests. One of the options is having pink hot chocolate and cookies sent up to your room – how very Eloise!

I thought it would be fun to surprise Ella with some pink hot chocolate of her own the next time we read the book. It was a hit!

 

The first time I made this pink hot chocolate, I just used white chocolate chips, cream cheese, vanilla extract, milk and pink food dye. It was delicious, but adding strawberries to the mix definitely takes it up a notch!

I love the balance of flavours in this pink hot chocolate – pleasantly sweet, tart and just slightly fruity. I have not yet tried it with dehydrated strawberry powder (my secret ingredient in my Strawberry Heart Macarons) but I imagine that would really amp up the flavour!

While I provide ingredient amounts below, you may want to adjust the ingredients based on your personal preferences.

The cream cheese gives a slightly tart flavour and a creamy richness. My first name for this recipe was actually “Pink Velvet Hot Chocolate” because of the smooth texture the cream cheese lends the hot chocolate.

Vanilla is personal preference – I love adding real vanilla extract to just about everything, but it can be left out of this recipe if you’re not as big of a fan.

Strawberry Cream Cheese Hot Chocolate Ingredients

  • 2 cup milk
  • 1/2 teaspoon vanilla extract
  • 4 ounces white chocolate chips
  • 2 ounces cream cheese, room temperature* and cut into 16 pieces
  • 2 Tablespoons strawberry puree, or 1/2 cup chopped strawberries
  • Pink food dye, optional
  • Whipped cream, for garnish

Tip: you can use strawberry syrup in place of the strawberry puree, if desired.

  • Whisk

How to Make Pink Velvet Hot Chocolate

In a medium saucepan, warm up the milk over medium heat for 2 minutes as you assemble the ingredients.
   
Whisk in the vanilla and cream cheese until melted.
Whisk in the white chocolate until melted and smooth.

Add the strawberry syrup or puree last, and adjust the color as desired with the food dye.

Ladle into your serving glasses and add a garnish of whipped cream.
