Monster Meringue Cookies (with Video)
I first made my Ghost Meringues a few years ago, but with Ella’s obsession with Hotel Transylvania I thought it would be fun to make some Monster Meringue Cookies inspired by the various Blobby and Spiky monsters roaming the halls of the hotel – with some ghosts thrown in for good measure, too!
Monster Meringue Cookies Recipe
My daughter and I are Halloween people. We get super excited and decorate our house sometime in AUGUST, and spend the next two and a half months making Halloween crafts and reading our favorite Halloween-related books.
Ella likes to stay away from the truly spooky or scary stuff, so books series like The Worst Witch and movies like Hotel Transylvania have been perfect for her. She gets to embrace her love of all things supernatural without ever being frightened.
Last year, we got to attend the premiere of Hotel Transylvania’s Teletoon TV series and they had lots of fun themed food ideas at the party, so I thought it would be fun to make a delicious Monster-esque recipe for our own family movie night.

I didn’t want something super complicated, so some super simple meringue cookies inspired by Blobby the Blob (a green slime “monster” who is more silly than scary). We also experimented making some Spiky Monsters and added some Ghost Meringues in for good measure.
These cookies are light, crisp and airy, perfect for a light dessert or adding as decoration for cakes or cupcakes. They would be perfect for a Halloween party! They also last for a couple weeks if stored in an airtight container in the fridge.
While I just used vanilla extract, feel free to use flavored powders or extracts to customize your cookies.
Note: in the video and when I made my monster meringue cookies, I added the candy eyes to the wet meringues before baking – but I’ve since received two comments from people who had their candy eyes MELT on them, so I’ve adjusted the directions to suggest adding the candy eyes after baking with a dab of frosting or melted chocolate. Of course, if you have previously baked candy eyes in your oven without issue, feel free to use that method.

Ingredients for Meringue Cookies
- Egg Whites
- Cream of Tartar
- White Sugar
- Powdered Icing Sugar
- Vanilla Extract <– can use another flavor extract, if desired
- Food coloring <– this set of food coloring has lasted me forever and I love that it creates highly saturated colors with just a drop
- Candy eyes
- Frosting or melted chocolate
Tip: some people like to add the cream of tartar right away, but I find that it can stabilize the eggs a bit too soon, so I like to wait until the eggs are already pretty frothy and glossy before adding it in.
Kitchen Tools You May Find Helpful
- Electric mixer <– this is a great hand mixer if you don’t want to make the investment into a stand mixer
- Measuring cups and spoons
- Mixing bowl
- Parchment paper <– can use silicone baking mats
- Cookie sheet
- Piping bag
How to Make Monster Meringues
Preheat the oven to 225 degrees
With a mixer, beat the egg whites for 4 minutes.
Mix on medium speed until soft peaks form and then increase to faster speed. You can add the cream of tartar at this time to help stabilize the eggs.
Alternating between the sugar and powder sugar, add in 1 Tablespoon at a time until stiff peaks form.
Add in the vanilla
Using a pastry bag with a circle tip, pipe on the meringues onto a baking sheet in various monster shapes.
Bake for 1 hour and 20 minutes, but start checking often when they reach 45 minutes.
Let dry completely before attaching the candy eyes.
Use a dab of frosting or melted chocolate to attach the candy eyes to the cooled meringues.

OMG I’m so glad that you have a good sense of humour about this!! I am updating the recipe to say that some candy eyes may melt and maybe to attach them afterwards with some icing or melted chocolate..
