I simply whipped together a quick cilantro lime chicken marinade and let some chicken thighs sit overnight, and it resulted in one of the best (and easiest) chicken skillet recipes I’ve made in awhile.
Bright lime and fresh cilantro cut through the richness of seared chicken thighs in this simple skillet dish, creating a balance that is both lively and deeply savory. In a casserole dish with a lid, stir together the lime juice, garlic, cilantro, paprika and cumin.
Path the chicken thighs dry then roll in the marinade mixture until well-coated, then cover the container and refrigerate overnight.

Allow the chicken to sit at room temperature for 15-20 minutes before cooking.
Heat 2 Tablespoons of olive oil in a skillet over medium heat.

Season the chicken with salt and pepper, then place skin-side down in the hot oil.
Sear until golden brown, about 4-5 minutes.
Flip the chicken and continue to cook over medium heat until an inserted thermometer reaches 165F.
Allow chicken to sit for up to 5 minutes before serving to ensure a juicy texture.
