Today’s homemade seasoning recipe is a must-make if you’re a fan of spicy food or grilling. This Blackening Spice is a HelloFresh Copycat recipe that you won’t be able to get enough of!

Blackening Spice Recipe
Blackening seasoning is a bold, flavorful spice mix traditionally used in Cajun and Creole cooking to create a distinctive charred, smoky crust on proteins like fish, chicken, or steak when cooked at high heat, often in a cast iron skillet.
The technique, known as blackening, involves coating the food with the seasoning and then searing it, which results in a flavorful, darkened exterior while keeping the interior tender and juicy.
This particular recipe for blackening spice is a copycat of Hello Fresh’s Blackening Spice, which I tried in my subscription and loved. I don’t know why they don’t offer the spice blends for sale separately, but I was able to track down their original recipe and recreate it.

The best cost savings with this recipe is to purchase your spices from a bulk store, or if that’s not an option, buy the large containers of the individual spices and herbs. Buying the little containers to make this seasoning would be crazy expensive (but ironically, still cheaper than using the seasoning packets).
This Copycat HelloFresh Blackening Spice is shelf-stable for up to a year, as long as you use fresh (dried) herbs and spices when you make it and store in a cool, dry spot in your kitchen.
This seasoning is gluten-free, paleo, low-carb and vegan and makes a great homemade gift.
What is Blackening Spice? Our blackening spice is made with a variety of common seasonings: two types of paprika, onion powder, garlic powder, white pepper, black pepper, thyme, oregano and cayenne peppers.
(Some recipes also include cumin, mustard powder and salt. Add these to your blend, if desired.)
Why Would You Want to Make Blackening Seasoning?
- Making your own blackening seasoning allows you to customize it to your personal preferences – making it spicier, increasing the amount of a favorite herb, reducing the salt, etc.
- It’s versatile and flavorful, so you will get a lot of use out of your homemade blend
- Pre-made blackening seasonings can sometimes contain preservatives, anti-caking agents, or less-than-fresh spices. When you make it yourself, you know it’s fresh and free of these ingredients if you are trying to avoid them.
- It’s simple and easy to mix up in just a few minutes.
