Cinnamon Bun Popcorn

Cinnamon Bun Popcorn Recipe
You know I love all things cinnamon buns – we’ve made copycat cinnabuns, cinnamon bun pancakes, cinnamon bun crackers – and this is probably our easiest cinnamon bun-inspired dessert yet!
However, if you’re more of a snickerdoodle fan, skip the white chocolate drizzle and call this a snickerdoodle popcorn – yum!
A simple sweet popcorn recipe with a baked cinnamon-brown sugar coating and white chocolate drizzle, I made this popcorn for a bake sale at Ella’s school and it sold out quickly. I even got a request from her teachers to send some more in for them since they didn’t get a chance to buy a bag before they sold out.
This would be a great dessert for a family movie night, or a casual dessert at a party. You could even use it to make a crazy movie theatre-inspired popcorn mix by adding a few of your favorite concession snacks in.
You could even package this cinnamon bun popcorn in cute gift bags or popcorn containers for a sweet homemade gift.
This popcorn recipe is best enjoyed within 3 days of making (it’s best the day of making) so plan accordingly.
Cinnamon Bun Popcorn Ingredients
- Butter
- Brown sugar
- Granulated white sugar
- Light corn syrup, optional
- Salt
- Ground cinnamon
- Air Popped Popcorn
- Vanilla white chocolate or candy melts
- Coconut oil

Tip: if you like chopped pecans in your cinnamon buns, you can also add them to this recipe in between spreading the popcorn out on the baking sheet and baking it, or add after drizzling with the white chocolate.

How to Make Cinnamon Bun Popcorn
Preheat oven to 250 F.
Line a baking sheet with parchment paper or a silicone baking mat.
Spread the popcorn all over the baking sheet and set aside.
In a large, heavy pot, melt butter, then add brown sugar, corn syrup, and salt.
Stir together over medium heat and let come to a boil.
Boil for 2-3 minutes until starting to thicken and take off heat.
Stir, and continue cooking over medium heat until mixture comes to a boil.
Once at a boil, stop stirring, and cook for 5 minutes.
Remove from heat, add cinnamon, and then pour evenly over the popcorn mixture.
You can either let the popcorn absorb the syrup slowly, or bake it to harden the syrup.
Bake for 5-10 minutes until the syrup is fully absorbed. Stir at the 5 minute mark and determine if it needs more baking time.
Remove the popcorn from the oven and while it is cooling, place the white chocolate in a small microwave-safe bowl and heat for 35 seconds. Stir well, and reheat as needed to melt completely.
Stir the coconut oil into the melted chocolate to make it nice and smooth and drizzle over the popcorn.
Let the chocolate drizzle dry and then break the popcorn up and place in your serving bowl or individual servings bags.
