One of my favorite low carb snacks at the moment are these Buffalo Chicken Stuffed Avocados. They would also be perfect for potlucks or as a party appetizer if you have low carb guests.
Buffalo Chicken Stuffed Avocados Recipe
I am the furthest thing from keto, but I generally like to ensure that my family is filling up on protein and vegetables. We just feel better and have more energy eating this way, but I have zero desire to lose weight or go on a restrictive diet.
While I have been sharing most of our low carb recipes on my low carb niche site, Sizzle and Salt, this stuffed avocado recipe was one I wanted to share here because it is so kid-friendly!
Ella loves avocados now, but it took awhile for me to figure out avocado recipes that she liked. She loves avocado toast, avocado with scrambled eggs, avocado salads, and now – this buffalo chicken stuffed avocado recipe! It’s kind of the perfect mash-up of a cheater guacamole and buffalo chicken dip.
Because I seasoned the avocado with lime juice, I can send these as a lunch for Ella without the avocados going brown, and they also make a great appetizer or party food.
For my low carb friends (or those serving these stuffed avocados to low carb friends), one half stuffed avocado works out to about 2g net carbs.
Stuffed Avocado Ingredients
- 2 chicken breasts, skin removed
- 1/2 cup buffalo-style hot sauce
- 1/4 cup ranch or blue cheese dressing, to taste
- 3-4 avocados
- 1/2 red onion, diced
- 1 Tablespoon lime juice
- 1/4 cup cilantro, optional
Tip: add 4oz of cream cheese (half a brick) to make the buffalo chicken more like buffalo chicken dip.

How to Make Buffalo Chicken Stuffed Avocados
Place the chicken breasts in a saucepan over medium heat and add the buffalo-style hot sauce.
Poach the chicken for 20 minutes, until cooked through and the chicken can be shreded with two forks. If you want to add the optional cream cheese, do it know and allow to melt and mix into the shredded chicken fully.
Remove buffalo chicken from heat, shred the chicken and add ranch or blue cheese dressing, to taste.
Meanwhile, cut your avocados in half and scoop out the flesh to a medium-sized bowl.
Season the avocados with your diced red onion, lime juice and optional cilantro.
Scoop 2 Tablespoons of the guacamole mixture back into each avocado. (You will have some guacamole left over.)
Top the avocados off with a generous scoop of the shredded buffalo chicken.
Drizzle on additional dressing and serve.
