Bailey’s Chocolate Truffles
A fun Bailey’s chocolate dessert recipe just for the grown-ups, these No Bake Bailey’s Chocolate Truffles are an indulgent treat made with just 5 ingredients!
Bailey’s Truffles Recipe
This recipe is for those of us who will always want a little sweet treat after supper, but don’t necessarily have the room for a big serving of dessert.
These indulgent, bite-sized Bailey’s chocolate truffles are indulgent and satisfying, without being too heavy, and naturally – they pair perfectly with an after-dinner coffee or cocktail if you have guests over. You can even pop one in a mug of hot coffee for a fun Bailey’s mocha infusion.
They are super fudgy and chocolatey with a subtle Bailey’s flavor. You can roll the truffles in any coating you desire (sprinkles, nuts, cocoa powder) or even dip them in chocolate or candy coating.
These would make an excellent homemade gift and they freeze really well! Store the truffles in a ziptop freezer bag or your favorite freezer containers for up to 4 months. (This set of freezer containers is a crazy bargain.)

Bailey’s Truffle Ingredients
- Heavy Whipping Cream <– 35%
- Bittersweet Chocolate Chips <– at least 70% cocoa content
- Unsalted Butter, softened
- Bailey’s Irish Cream
- Cocoa Powder

Tip: if you just want the flavor of Bailey’s without adding in the alcohol content (especially since its not being “baked off” in this recipe), you can use the Bailey’s coffee creamers or an Irish Cream-flavored coffee creamer in it’s place.

How to Make Bailey’s Chocolate Truffles
Line a 8″ x 8″ casserole dish with parchment paper and set aside.
Place the chocolate chips in a heat-proof bowl and set aside.
Place the heavy whipping cream in a small pot over medium-high heat and bring to a simmer, about 3 minutes.
Once the heavy whipping cream has simmered, pour the hot cream over the chocolate chips.
Allow mixture to sit for 2 minutes then whisk until smooth.
Whisk in the butter and Bailey’s, then fold out into the prepared casserole dish.
Place into the fridge overnight (or at least 4 hours).
Line a baking sheet with parchment paper or a silicone baking mat and set aside.
Place your cocoa powder in a shallow bowl and set aside.
Using a melon baller, scoop out about a Tablespoon-sized amount of the ganache and roll in your hands to form a ball.
Place onto the lined cookie sheet as you repeat with the entire truffle mixture.
Roll each truffle in the cocoa powder until evenly coated.
These truffles can be stored in a sealed container at room temperature for up to three days, or kept in the fridge for up to a week. (Store in the freezer if you want them to last longer.)

Ingredients

- 1 cup 72% bittersweet Chocolate Chips
- 3 Tablespoons unsalted butter, softened
- 4 Tablespoons Bailey's Irish Cream
