Mojitos are fast becoming my summer drink of choice, and with the season for slushies running out I decided to make the ultimate summer cocktail – a Mojito Slushy with cooling mint and sharp lime juice. This cocktail is a must-make before the cool weather hits!

Frozen Mojito Cocktail Recipe
Mojitos hail from Cuba, where knowing how to cool off on a hot summer’s day is a necessity.
The mint in this cocktail is unbelievably refreshing – and please ignore any hesitation that you might have around putting fresh herbs in your cocktail. Just trust me on this. Mint extract is not your friend and will ruin this amazing cocktail recipe.
By the time the blender is done grinding down the ice, it will have also made the mint leaves completely undetectable, leaving only their fresh taste and that unparalleled cooling sensation.
The lime however can be mixed up – use fresh, from a bottle – or even use orange juice or lemon for a different citrus zest. But once, just once, make sure you enjoy this cocktail in all of it’s mint-lime glory.
This cocktail is perfect for serving to a crowd, or just enjoying as you watch the sunset on a hot summer day. If serving to friends, be sure to whip up the simple syrup at least an hour before your guests arrive so you can minimize your time preparing this recipe.
You could even blend up the slushies and freeze them in a loaf pan or freezer bag until your guests arrive, and then just set the frozen concoction on the counter until you can scoop them into glasses.
I grabbed “the standard” Bacardi Superior and also this new Bacardi Banana Flavored Rums – I am definitely going to be experimenting with the banana rum with a summer punch recipe, like my popular Jamaican Rum Punch.
Rum is a super versatile spirit that you can incorporate in many different cocktails and Bacardi has a nice smoothness that makes it easy to work with when experimenting with cocktail recipes.

How to Make Lime-Mint Mojito Slushies
To start, you need to prepare a simple syrup.
In a saucepan over medium heat, combine the sugar and water. Bring to a boil, stirring often, until sugar is dissolved and the syrup coats the back of a spoon nicely.
Pour into a mason jar and refrigerate as you prepare the other ingredients.
Place the ice, 1/3 cup of the simple syrup, lime juice, mint leaves, lime zest and rum into a blender and blend until smooth.
Spoon into glasses and garnish with a sprig of mint and slice of lime.
