Apple Pie Cookies are a fun hand-held mini apple pie that has all of the cozy flavors of a classic apple pie, in a miniature, cookie-sized form. Buttery, flaky pie crust is formed into a beautiful lattice top and laid over a sweet apple pie filling before being sealed with an egg wash and sanding sugar for a satisfying crunch.

While super simple to make at home, these mini apple pie cookies look and taste like they came straight out of a fancy bakery!

Easy Apple Pie Cookies Recipe

Our Dutch Apple Pie Cookies are always popular this time of year, but while super cute and yummy, they are a bit time-consuming to make. So, I wanted to create a more simple and straight-forward apple pie-inspired cookie that can be whipped up in 15 minutes or less with just a handful of ingredients.

Today’s mini apple pie lattice cookies are just 4 ingredients – making them perfect to whip up with little chefs! The crust bakes up buttery and crisp, while the apple pie filling turns jammy and lightly caramelized.

My daughter is obsessed with making these mini pie cookies and so far we’ve made blueberry, strawberry and now apple versions. We’ve also come up with a few subtle variations below that can help you customize your apple pie cookies to be truly your own.

Apple Pie Cookie Variations:

  • Cinnamon Sugar Dusting: Swap the sanding sugar for a cinnamon sugar mixture.
  • Salted Caramel Drizzle: After baking, add a thin drizzle of warm caramel sauce and a pinch of flaky salt over the cooled cookies.
  • Salted caramel center: Add a small spoonful of thick caramel on top of the apple mixture before adding the lattice topping.
  • Maple Glaze: Stir a small amount of maple syrup into a simple powdered sugar glaze and lightly brush over the cooled cookies.
  • Simple Icing Glaze: Whisk together 1/2 cup powdered icing sugar and 3 Tablespoons heavy cream (OR apple cider) and drizzle over the baked, cooled cookies.
  • Crumble topping: Skip the lattice and top the cookies with a small spoonful of quick crumble made from butter, flour and chopped pecans.

Apple Pie Cookie Tips and Tricks

How to store apple pie cookies: Store the baked cookies in an airtight container in the fridge for 2-3 days.

No parchment paper? Spray the baking sheet with nonstick cooking spray. (I highly recommend buying silicone baking mats for a reusable alternative to parchment paper.)

You can pick up the rest of the pie crust (after cutting the cookies out of it) and roll it into a ball and flatten it out with a rolling pin to cut extra cookies out. (If you end up with leftover pie crust, make a small batch our pie crust cookies.)

No cookie cutter? Use a cup that’s around about the same size.

Apple filling too big? I used scissors and just briefly chopped up the apples in the can to smaller pieces.

If you have time, rechill the cut cookies before baking. A short rest in the refrigerator strengthens the laminated layers in the dough and gives the cookies a more defined shape in the oven.

Apple Pie Cookies from Scratch

We’ve made the filling for these apple pie cookies from scratch before and if you’d prefer to do that as well, use the following ingredients and then swap in for the recipe outlined below:

  • 3 Tablespoon unsalted butter
  • 2 medium apples, peeled and diced
  • 1⁄2 cup brown sugar
  • 2 Tablespoons lemon juice
  • 2 Tablespoons water
  • 1 Tablespoon cornstarch
  1. In a medium sauce pan, combine the diced apples and the butter. Heat over medium heat for about 5 minutes or until the butter has melted.
  2. Add in the lemon juice and brown sugar. Continue to heat over medium and cook for an additional 5-10 minutes or until the apples are tender.
  3. Meanwhile, in a small bowl, combine the water and cornstarch.
  4. Add the cornstarch mixture to the tender apples and stir constantly for a minute. The apple liquid mixture should be thick. Allow to cool until cookies are ready to assemble.

How to Make Apple Pie Cookies

Preheat the oven to 350° and line a large baking sheet with parchment paper. Roll the pie crust out on a flat surface and use a cookie cutter to cut out circles out of 2 of the pie crust rolls.

Add the cut out cookies to the baking sheet. Add 1-2 tablespoons of the apple pie filling to the middle of each cookie. Make sure to leave a tiny bit of bare pie crust around the apple pie filling. Unroll the last two pie crusts and use a pizza cutter or knife to make small 1/4″ to 1/2″ wide strips.

In a small bowl add the egg and stir, brush the beaten egg around the edge of the cut out pie crust, making sure there’s no apple pie filling on the edges. Take the pie crust strips and make a lattice pattern on the cookie, pressing the edges down on the egg washed sides. Do this step carefully so the strips don’t break.

Once you have all the strips placed correctly use the same cookie cutter and place over the cookies so the edges come clean from the lattice. Brush the beaten egg over top of each cookie once again and then sprinkle with the sanding sugar. 

Bake in the oven for 20-25 minutes or until the tops are golden brown. Let cool completely and then serve and enjoy!

  • 4 Pre-made Pie Crusts
  • 21 oz Apple Pie Filling
  • 1 Egg
  • 1 Tablespoon White Sanding Sugar

Instructions

  1. Preheat the oven to 350° and line a large baking sheet with parchment paper. Roll the pie crust out on a flat surface and use a cookie cutter to cut out circles out of 2 of the pie crust rolls. 
  2. Add the cut out cookies to the baking sheet. Add 1-2 tablespoons of the apple pie filling to the middle of each cookie.
