Apple Cinnamon Coffee Cake Recipe
One of my favorite simple pleasures in life is having a friend over for a cup of coffee and getting a chance to catch up IRL.
While I love being able to keep tabs on everyone with social media, there is nothing like a dedicated gab session to catch up and connect.
The only thing that makes those catch-ups even better is having a little something sweet to serve alongside our coffee – and this apple cinnamon coffee cake is the perfect option for fall.
It’s super simple and quick to make – it even bakes in half the time of a standard banana bread, making it a great option for last minute plans. The cake crumb is light and airy and is wonderfully balanced with the apple pie filling and cinnamon brown sugar streusel. It’s decadent and indulgent without being heavy.
While we used canned apple pie filling, you can whip up our Cracker Barrel Fried Apples in less than 10 minutes for an easy homemade apple pie filling.
Due to the apple pie filling, this cake will only last for two days if stored at room temperature. I recommend storing in the fridge which allows you to enjoy this cake for a full week.
Can I freeze this coffee cake? Yes, to freeze your coffee cake wrap with plastic wrap or tinfoil, then store in a ziptop freezer bag or your favorite freezer containers. (This set of freezer containers is a crazy bargain.)
To make this recipe even easier, you can swap out our from-scratch cake recipe for a white cake mix. You can also use this recipe to make apple pie coffee cake muffins instead of a loaf for a convenient serving option.

How to Make Apple Coffee Cake
Preheat oven to 350F
Grease or line a standard-sized loaf pan and set aside.
In a large bowl, beat together the oil, eggs, vanilla and milk. Add in the sugar and continue to beat until no sugar crystals remain.
In a small bowl, stir together the flour, baking powder, salt and optional cinnamon.
Stir the dry ingredients into the oil mixture until just combined.
The number of apple layers you want in your cake will effect your assembly. For one apple layer, place 2/3 of the batter in the loaf pan and then spoon some apple pie filling into the centre – leaving 1” all around the apple pie filling to avoid it burning and causing the loaf to break in half. You may want to press down the apple pie filling a bit with the back of a spoon.
Pour the remaining batter over the apple layer and smooth down.
In a small bowl, combine the streusel topping ingredients and then sprinkle over the wet batter.
Bake for 30-35 minutes, until an inserted toothpick comes out clean of any batter (it will have some apple pie filling stuck to it).
