Lemon Raspberry Blondies
These Lemon Raspberry Blondies have the texture of a soft, chewy brownie with the bright, tangy flavor of lemon and sweet-tartness of raspberry. It’s the ultimate summer dessert for the lemon dessert fan in your life!
Lemon Brownies Recipe
Two of my favorite desserts are lemon cake and ultra-chocolatey brownies, so lemon blondies are the ultimate dessert mash-up for me.
These lemon raspberry blondies are fresh, moist, sweet and tangy – and practically melt in your mouth the minute you bite into them.
Although the texture is incredibly rich, the bright, summery flavours make this dessert still feel light on a hot summer day. Plus, it’s a one-bowl recipe that’s ready to bake in less than 10-minutes, which is perfect in the summer because the less amount of time I spend in the kitchen – the better!
I’m usually not a huge fan of raspberries, but that hit of tangy, sweet and jammy raspberries every couple of bites in this otherwise rich, sweet and tart lemon blondie makes for a welcome flavor and texture contrast that elevates these lemon blondies. If you’re not sure, swap them out for blueberries or diced cherries – or skip them altogether.
This is the perfect lemon dessert to make for summer parties and BBQs – or just spoil your family by bringing these out for a summer dessert!
Lemon Blondies Variations
- make orange or strawberry blondies by making the batter with orange or strawberry cake mix instead of lemon cake mix
- substitute the raspberries for white chocolate chips – or add white chocolate chips along with the raspberries for a flavor trifecta
- use a different fruit like blueberries or diced cherries
- make a raspberry glaze by adding 1-2 Tablespoons of raspberry syrup or raspberry jam to the glaze mixture
What’s the difference between a blondie and a brownie? Blondies are generally a brownie recipe that contains no cocoa powder and usually a bit less cocoa powder.
Sometimes, other flavours are added to that base to create a uniquely-flavoured dessert with the texture of a brownie – without the cocoa powder present to overwhelm the other flavours. (An example is our peanut butter blondies here made with chickpeas.)
These lemon blondies are a bit different in that we used cake mix, but the texture is so similar to a blondie or brownie so I felt the name was still the best description! You could alternatively call these lemon brownies – unfortunately, the name lemon squares is already taken!
How to store these lemon raspberry blondies: Store in the fridge for up to a week. They probably can be kept on the counter for 2 days, but I find raspberries go bad so quickly at room temperature so I personally didn’t want to risk it.
To freeze lemon blondies, wrap the unglazed lemon blondies with foil or plastic wrap and then place in a ziptop freezer bag or your favourite freezer containers for up to 2 months. (This set of freezer containers is a crazy bargain.)
Thaw overnight and then glaze in the morning, if desired.

How to Make Lemon Raspberry Blondies
Preheat oven to 350F.
Grease a 8″ x 8″ casserole dish and set aside.
In a large bowl, beat together the cake mix, vegetable oil, eggs and vanilla extract for 2 minutes until well combined and fluffy.
Pour the batter into the prepared baking dish.
Press the raspberries into the batter, then use a spatula to even out the top of the batter and slightly cover the majority of the raspberries.
Bake for 20-24 minutes until an inserted toothpick comes out clean.
Allow the blondies to cool completely before preparing the glaze.
In a small bowl, whisk together all glaze ingredients.
Pour the glaze all over the blondies and smooth over with an offset spatula until blondies are completely covered.
Allow the glaze to set for at least 1 hour before cutting the blondies to store or serve.
