Homemade Chocolate Twinkies recipe is a fun twist on the classic snack cake – and in my opinion, they taste way better than the originals! This recipe features a simple homemade chocolate sponge cake filled with semi-homemade marshmallow cream filling.

Homemade Chocolate Twinkies feature a delicate chocolate sponge cake that is light yet just sturdy enough to hold in that marshmallow cream. These homemade chocolate snack cakes just melt in your mouth and are absolutely decadent!

Homemade Chocolate Twinkies Recipe

I used to love Twinkies when I was younger but I swear they changed the recipe at some point and it just doesn’t hit the spot for me like it used to. So, I was pumped when I found this Twinkie Baking Pan to attempt to make my own.

(It also comes in a silicone version.)

While we made our own chocolate sponge cake for this recipe, you can use a boxed chocolate cake mix (if desired) and focus your attention on making that luscious semi-homemade marshmallow cream filling.

The homemade chocolate sponge cake is delicate and light while being just sturdy enough to hold in that marshmallow cream. These homemade chocolate snack cakes just melt in your mouth and are absolutely decadent!

If you don’t have a Twinkie Pan or don’t want to buy one, you can make this recipe as cupcakes or mini-cupcakes instead!

Homemade Chocolate Twinkie FAQs

How long do these homemade twinkies last? These twinkies can be stored in an airtight container at room temperature for 3 days, or kept in the fridge for up to a week.

Can these homemade twinkies be made gluten-free? Yes! You can use gluten-free cake mix to make these homemade twinkies gluten-free for different dietary needs.

Can these homemade Twinkies be frozen? Yes, to freeze homemade Twinkies you can individually wrap each Twinkie with plastic wrap or foil and then store in an airtight freezer container or ziptop freezer bags for up to a month. Thaw completely in the fridge before enjoying.

You can use this method of making homemade chocolate Twinkies to make a variety of uniquely flavored Twinkie recipes:

  • Funfetti Twinkies are perfect for birthdays and you can add raspberry flavoring to the filling for a bright pop of color and tangy flavor
  • Spice Cake Twinkies were one of my first experiments in making “homemade” Twinkies
  • Chocolate Peanut Butter Twinkies can be made by adding a couple tablespoons of peanut butter to the marshmallow cream filling
  • Replicate the actual taste and texture of Twinkies by using angel food cake mix
  • Strawberry Twinkies would be divine – and you can swap out the shortening for cream cheese for a strawberry cheesecake twist!
  • A thick salted caramel would make a great filling – or stir some caramel sauce into the marshmallow cream filling for a caramel marshmallow twist!
  • Coconut Cream Cakes can be made by using coconut cake mix (Dolly Parton has a great one with Duncan Hines) and either keep the filling the same or add a dash of coconut extract or lime extract for a tropical twist!

  • Twinkie Pan
  • Measuring Cups and Spoons
  • Mixing Bowl
  • Electric mixer <– this is a great hand mixer if you don’t want to make the investment into a stand mixer
  • Chopstick
  • Piping Bag
  • Wooden Spoon or Spatula <– I like these spatulas because they are one solid piece and don’t have removable heads for bacteria to get trapped underneath. Plus they are heat-resistant and have a lifetime warranty.

How to Make Homemade Chocolate Twinkies

Preheat oven to 350F.

Grease a twinkie pan and set aside.

Using a stand mixer (essential), beat the eggs and salt for 2 minutes then add the sugar and continue beating for 13 more minutes until the eggs are white and leave a ribbon along the top when the beaters are drawn over.

In a medium bowl, stir together the flour, cocoa powder and baking powder. Add half to the egg mixture, incorporate fully, then add the butter, then remaining flour mixture.

Portion out batter into the twinkie pan, filling each about 2/3 of the way full.

Bake for 15-18 minutes, until an inserted toothpick comes out clean.

Let cool completely.

Meanwhile, prepare the filling by beating together all marshmallow filling ingredients. If it’s too stiff, add a teaspoon or two of hot water.

Scoop the filling into a piping bag and snip a tiny amount off the end.

Using a chopstick, make three holes in the bottom of each twinkie. Try to move the end of the chopstick around a bit to make a bigger cavity for the filling.

Pipe the marshmallow filling into each of the three holes of each twinkie.

Ingredients

Chocolate Sponge Cake Ingredients:

  • 4 Eggs
  • 1 teaspoon Salt
  • 3/4 cup White Sugar
  • 3/4 cup All-Purpose Flour
  • 1/4 cup Cocoa Powder
  • 1 1/2 teaspoon Baking Powder
  • 2 Tablespoons Melted Butter

Marshmallow Filling Ingredients:

  • 2 cups Marshmallow Fluff or Cream
  • 1/2 cup Shortening
  • 1 teaspoon salt
  • 1/3 cup Powdered Icing Sugar
  • 1 teaspoon Vanilla Extract

Instructions
