A delicious way to enjoy all of the benefits of chia seeds – in a Chocolate Chia Seed Pudding! This chocolate pudding is sugar-free and loaded with vitamins and minerals, making it a perfectly acceptable way to start the day.

Chocolate Chia Seed Pudding Recipe

Chia seeds are considered a superfood thanks to their health benefits, including a high amount of protein, fibre, omega-3 fatty acids, vitamins and minerals. Just 1 tablespoon contains 11g of finer, 4g of protein and 5g of omega-3s.

They are great for brain, bone and heart health, help balance your blood sugar and (most noticeably) are great for digestion.

While I often add chia seeds to our smoothies and other desserts (like these mermaid chia seed popsicles), my daughter’s favorite way to enjoy them is in chia seed pudding!

Chia seed pudding’s texture is similar to tapioca pudding, but If you absolutely hate the texture, the pudding can be blitzed in a blender to create a smoother texture that is more similar to a traditional, velvety pudding.

This chocolate chia seed pudding is rich, chocolatey and sweet – it’s indulgent enough for dessert while being healthy enough to be a great choice for breakfast.

For a more indulgent version of this chocolate chia seed pudding, swap out the cocoa powder for couple tablespoons of Nutella.

For a chocolate peanut butter version, you can add a tablespoon or two of peanut butter to the pudding.

How to store chia seed pudding: chia seed pudding can be stored in airtight containers in the fridge for up to one week. It can also be frozen for up to 1 month.

Why didn’t my chia seed pudding thicken or set up? This can happen if you don’t stir the mixture well enough, breaking up clumps of the chia seeds to ensure that each seed is surrounded by liquid for it to absorb.

It can also happen if you didn’t use enough chia seeds, so if you’re confident the mixture has been well-stirred, add another couple of teaspoons of chia seeds, stir well and see if the texture improves after sitting in the fridge for at least another 30 minutes.

The secret to this pudding is all of the stirring! You definitely need to stir the ingredients at least twice – once when combining and at least once about 10-15 minutes after it’s been sitting. This helps break up any clumps of chia seeds that may form, resulting in a gelatinous, gooey pudding rather than a creamy pudding.

Tip: you can use any milk to make chia seed pudding, I prefer either whole fat coconut milk or whole fat cow’s milk.

How to Make Chocolate Chia Seed Pudding

In a medium-sized bowl, combine the coconut milk, chia seeds, maple syrup, vanilla extract, cocoa powder and optional salt.

Whisk well to combine.

Allow the mixture to sit out for 10-15 minutes, stirring every few minutes.

Cover the bowl and transfer to the fridge for 1-2 hours.

Taste and adjust the milk, as desired.

  • 1/4 cup Chia Seeds

Instructions
