Today’s delicious berry coconut popsicles combine the creamy richness of coconut milk with the tangy sweetness of yogurt, creating a velvety base that perfectly complements the burst of juicy flavors from mixed berries.

They are a healthy alternative to most store-bought popsicles, but will still satisfy your kids’ cravings for all things sweet.

Packed with antioxidants and probiotics from yogurt, and enriched with vitamins and minerals from mixed berries, they offer a nutritious boost while helping the kids cool off after playing in the summer heat.

To further enhance the coconut flavor, feel free to use a coconut yogurt instead of a traditional dairy yogurt. This is also a great way to make this wholesome treat completely dairy-free for kids or guests with dietary restrictions.

Coconut Popsicle Variations:

  • Mango Coconut Popsicles: Substitute 2 cups of diced ripe mango for the mixed berries.
  • Pineapple Coconut Popsicles: Replace the mixed berries with 2 cups of diced pineapple.

How to Make Berry Coconut Popsicles

Mix together the yogurt, honey and milk and set aside.

Arrange the berries as desired in the popsicle molds – filling at least 2/3 of the way. We added wild blueberries to the bottom and then raspberries on top but you could mix them up or create alternating stripes.

Pour the yogurt mixture over the berries and use the popsicle stick to help push the yogurt mixture into any open pockets.

Secure the popsicle sticks/lids and place in the freezer for at least 4 hours or overnight.

Ingredients

  • 1 cup yogurt
  • 2-3 Tablespoons honey, optional, to taste
  • 2 cups mixed berries (we used wild blueberries and raspberries)
  • 1/2 cup milk or coconut milk
  • 1 teaspoon vanilla extract

Instructions

  1. Mix together the yogurt, honey and milk and set aside.
