Green Beans with Almonds Recipe

Browned butter. Lemon. Toasted almond slices. And perfectly sauteed green beans. This side dish is simplicity at it’s finest.

Green Beans Almondine (“amandine”) are a traditional French way to prepare fresh green beans, allowing them to retain their crunchy texture and creating a delicious flavor profile that tastes gourmet but is incredibly easy and quick to whip up.

Seriously, 10 minutes, 6 ingredients. This is my kind of vegetable side dish, allowing me to focus on the main course while still ensuring that every thing on our plates tastes amazing.

Plus, even though the flavor profile is amazing, it doesn’t overpower the plate, allowing it to pair well with a variety of main courses.

Some versions call for shallots, but that’s not an ingredient I often have on hand and I wanted to keep the ingredients simple and basic enough that this recipe can reliably be one that you just pull out whenever you need a quick veggie side dish. Regular onions can’t easily be substituted as the flavor is too strong and will overpower this delicate dish.


For best results with any green bean recipe, you just want to quick blanche them for a couple minutes so they are still a bit squeaky when you bite into them. Drain and rinse with cool water immediately to stop them from continuing to cook. If in doubt, err on the side of undercooking the green beans – crunchy green beans are always better than soggy, soft green beans.

If you buy French green beans, they will come pre-trimmed. If you need to trim your green beans yourself, simply rinse and then lay a handful at a time on a cutting board. Use your hand or the edge of a knife to line up the ends of the green beans evenly, and then chop off about 1/4″ inch. Repeat on the opposite side and then with all green beans.

Do I have to shock the green beans? Shocking green beans is when you immerse them in a bowl of ice water after blanching. It’s useful when you are prepping a recipe ahead of time, but not necessary when you plan to serve the green beans soon, as with this recipe.

How do you know if green beans have gone bad? Green beans are great because they are inexpensive and last for days in the fridge. When green beans go bad they can feel slimy, have brown spots or dried out tips. If you need to shop more than a couple days in advance, opt for frozen green beans.

Variations on Green Beans with Almonds

  • add a teaspoon of garlic to add some sweet acidity
  • add crushed red pepper flakes for some spicy heat
  • swap out the green beans for sauteed broccoli, cauliflower or carrots
  • use walnuts or pecans in place of the almonds
  • use shredded coconut in place of the almonds
  • swap out the salt for your favorite seasoning blend
  • use coconut oil instead of the olive oil-butter blend

  • 4 cups green beans, ends cut off
  • 3 Tablespoons butter
  • 2 Tablespoons olive oil
  • 1/3 cup slivered almonds, or more to personal preference
  • 1-2 Tablespoons lemon juice, personal taste
  • Salt, as needed

How to Make Sauteed Green Beans with Almonds

Bring a heavily salted pot of water to boil over high heat.

Cook the green beans for 2-3 minutes, until you reach your desired level of doneness. Drain and rinse.

While cooking the green beans, melt the butter and olive oil together in a skillet over medium heat.

Once hot, add the slivered almonds and toast for 2-4 minutes, turning occasionally. You can toast until just lightly beige or until golden brown.

Toss the cooked green beans with the butter, oil and almonds until fully coated.

Remove skillet from heat and add lemon juice.

Serve immediately.
