Easy Homemade Potato Soup
This Easy Homemade Potato Soup can be made with fresh potatoes or you can even use leftover mashed potatoes.
I try to get my kids outside every day – even when it’s blustery and cold outside, we try to stick it out as long as we can. I really take the saying, “there is no bad weather, just inappropriate clothing,” to heart.
When we eventually admit defeat and retreat inside, I like to have some hot homemade soup ready to warm them up. It’s more substantial than a hot cup of hot chocolate and I don’t have to deal with a sugar high afterwards. (Two points for soup!)
Plus, unlike other lunches that you can prepare ahead and reheat – you don’t lose any flavor or texture with soup. It tastes just as good reheated as it does fresh. (Three points for soup!)
I don’t know how we ended up with a can of potato soup one day – it was probably in the wrong spot when I was stocking up on cream of chicken soup (a staple in my pantry) but the kids loved it, so the next time I had a bunch of leftover mashed potatoes I thought I’d give a homemade version a try.
Not only is this homemade potato soup tastier than the canned version, it’s cheaper to make a giant batch of it and you can add in whatever mix-ins you want. My kids love a bit of crumbled bacon and shredded cheese – and I added a few chives and some pepper to my bowl.
This homemade potato soup is super easy to make and is creamy and filling without being heavy. It would be great served alongside my friend Trisha’s homemade stuffing – yum!
Ingredients for Easy Potato Soup
- 5 potatoes, peeled and chopped (approximately 3 1/2 cups)
- 4 cups water or broth
- 1 Tablespoon bacon grease or olive oil
- 1 onion, chopped
- Salt and pepper, to taste
- Green onions, optional garnish
Tip: for an even creamier soup, substitute half the water or broth with milk or half and half cream.

How to Make Easy Potato Soup
Boil your potatoes in water until cooked well – if you spear one with a fork, it should fall right off.
Drain out the water and leave the potatoes in the strainer as you cook the onion.
Place the bacon grease in a stockpot over medium heat and add the chopped onion. Cook until translucent, about 3 minutes.
Add back in the potatoes and the water or broth. Cover and cook until the potatoes start to break down, about 20 minutes.
Place in a blender or use an immersion blender and blend until smooth.
Season with salt and pepper to taste and garnish as desired.
