I think it’s been well-established here that I love spooky Halloween cocktails, so it should come as no surprise that I’ve concocted yet another delicious Halloween cocktail recipe for my collection – this time, a Shimmery Purple Bat Cocktail complete with edible eyeballs!

Our shimmery bat cocktail is a fun addition to any Halloween plans. It’s well-balanced with a understated sweetness and cherry-citrus flavor.

I love the touch of glamour and whimsy from the sparkly glitter which draws guests in to take a closer look – and then they notice a pair of eyeballs staring up at them from their drink! (And the eyeballs taste great, too!)

Have you ever noticed that the Bacardi Rum mark is a bat? (Right there in that red circle at the top of the label. See, I told you!)

The Bacardi bat served as my inspiration for this delicious and easy cocktail – I love the symbolism, especially with Halloween and the bat’s notorious transformations.

How to Make a Purple Bat Cocktail

Assemble your edible eyeballs by placing a blueberry in the pit-opening of the lychee.

How to make fruit eyeballs

Skewer through the fruit eyeball with a cocktail pick. Make a second eyeball for a spooky pair. Place in cocktail glass.

How to make a delicious purple shimmery cocktail recipe

In a cocktail shaker filled with ice, add in the rum, blue curaçao and grenadine. Shake or stir to completely mix and cool, then strain out half into each cocktail glass.

Add 1/2 teaspoon of edible glitter to each glass and stir to dissolve.

Shimmery Purple Bat Cocktail

A shimmery and sparkly rum cocktail that looks like a purple night sky with edible eyeballs skewered for a Halloween touch

Ingredients

  • 3 oz Bacardi Superior
  • 2 oz blue curaçao 
  • 1/2 to 1 oz grenadine or sour red liquor
  • Silver cake glitter
  • Ice
  • 4 Lychees, canned preferably 
  • 4 blueberries

Instructions

  1. Assemble your edible eyeballs by placing a blueberry in the pit-opening of the lychee.
  2. Skewer through the fruit eyeball with a cocktail pick. Make a second eyeball for a spooky pair. Place in cocktail glass.
