Taco Crescent Rolls Recipe

Blame my Italian-Irish heritage, but I tend to always make way too much food – and Taco Tuesday is no exception.

I would always rather have prepared too much food than not have enough. The worst case scenario is that I have leftovers to make the next day even easier. Oh no, whatever will I do?

Well, if the day before is Taco Tuesday, I’ll make these Taco Crescent Roll-ups!

Golden, crunchy crescent dough wrapped around flavorful, taco-seasoned ground beef and melty cheddar cheese. These Taco Roll-ups are a great lunch box option or a quick weeknight meal.

(And even if you make these taco roll-ups fresh without the help of leftovers, they are still super quick and easy – and a great option for parties or grab-and-go meals for busy weeknights.)

Add in extra veggies and offer a side of salsa and sour cream to dip and you have a well-rounded meal with minimal effort and prep.

This is also a great recipe for kids to make since it requires minimal prep and no sharp knives or cheese graters.

Tip: adding extra veggies (like green peppers, onions, corn, tomatoes, etc) or a can of black beans is a great way to fill up these tacos if you don’t have quite enough ground beef to fill up these crescent roll tacos.

Taco Crescent Roll-Up Variations:

  • Add a pickled jalapeños, a dash of hot sauce or crushed red pepper flakes to the beef for extra heat.
  • Stretch out the beef with a can of drained black beans for a more filling twist.
  • Cheese Swap: Try pepper jack, Colby, or a Mexican cheese blend instead of cheddar for added depth.
  • Add in some scrambled eggs for a fun breakfast option.

How to store leftover taco rolls: Store the leftover, baked taco rolls in an airtight container in the fridge for up to 5 days.

How to freeze taco roll ups: While you can freeze these taco rolls before or after baking, I prefer to freeze before baking and then when ready to enjoy, allow to thaw in the fridge overnight or on the counter for about an hour before proceeding with the baking instructions.

To freeze, wrap the cheeseburger roll well and store in an airtight ziptop freezer bag or your favorite freezer containers. (This set of freezer containers is a crazy bargain.) Enjoy within 2 months.

Tip: Make sure to drain the cooked beef and all toppings well to ensure that the taco rolls don’t get too oily or soggy.

  • Baking Sheet

How to Make Taco Roll Ups

Roll out the pizza dough onto a nonstick baking pan.

Cut the pizza dough into four squared sections.

Place a piece of cheese in the center of each square.

Sprinkle with browned, taco seasoned ground beef.

Roll up the taco rollups and cook in a 300 degree oven for 12-15 minutes or until crust is golden brown.

Dunk in sour cream & salsa & enjoy!
