Snowman Recipe
How adorable are these Snowman Meringues?
I’m kind of regretting not tracking down a solid-color candy corn for the nose, but other than that I think these snowman meringues are absolute perfection.
Crispy and light on the outside with a tender, vanilla center that is soft and lightly marshmallow-y, these meringues are super cute served as-is or used as an edible decoration on cupcakes or cakes.
If you’ve never made meringues before, I would probably start out with our peppermint meringues or Christmas tree meringues first before advancing to this snowman meringue OR instead of making a standing snowman, pipe a snowman shape directly onto your parchment paper.
Meringue Cookies can also be customized in so many different ways:
- change out the vanilla extract for a different flavor extract
- make them swirled in different colors (see our Peppermint Meringues for an example as to how to do that)
- add sprinkles or edible glitter before baking
- tint a portion of the meringue with gel food coloring and use it to pipe details like scarves on the snowmen
- don’t have candy corn? Use an orange M&M or other candy to swap it out

Meringue Cookies FAQs
How to store Meringues: these homemade meringue cookies can be stored in an airtight container at room temperature for 7-10 days.
My unusual tip to ensure that the meringues stay super crispy is to place a small bowl or container holding a few Tablespoons of uncooked rice in the container along with the meringues to absorb any moisture.
Can Meringues be Frozen? No, I do not recommend freezing the meringues or the meringue batter.

Pro Tips for the Best Meringue Baking Experience
I haven’t tried it myself, but I have read that if you add vinegar to your batter when you add the flavoring, the meringues will still set correctly, but have a softer chewier inside.
Ensure that your kitchen is not humid while making meringues – the moisture in the air negatively effects the meringues’ baking.
Use room temperature eggs – I leave them out the night before but ensure you leave them out for at least an hour before starting the recipe.
Ensure your bowl has absolutely no oil on it before starting to make this recipe, as the oil inhibits the eggs from whipping up – if you’re worried that it might have some trace amounts of oil, wipe the bowl with some white vinegar before starting
Use glass, metal or ceramic bowls to make meringues – not plastic.
Do not use those cartons of egg whites as a hack for this recipe because they contain stabilizers that will prevent the egg whites from whipping up into the glossy, stiff peaks necessary for the meringue
Ensure the sugar is fully dissolved in the meringue or else the meringues will sweat
The quicker you get the meringue in the oven after mixing, the better. If you leave it too long the edges can harden or start to pucker.
Keep the oven door closed while baking. Sudden changes in heat or humidity can ruin the cookies and cause them to sink.

How to Make Snowman Meringues
Preheat the oven to 225 degrees Fahrenheit.
Line a baking sheet with parchment paper and set aside.
Place the egg whites in a large bowl along with the cream of tartar.

Use the whisk attachment on a stand mixer or electric mixer and beat the egg whites on medium until they become foamy, about 4 minutes.
Turn the mixer up to high speed and gradually add the white sugar to the mixture a heaping tablespoonful at a time. Let the meringue mix and become white, creamy and thick.

Beat this for about 10-15 minutes or until you have achieved stiff peaks. Another way to test the doneness of the meringue is to squish some between your fingers. You should not feel any of the sugar granules when rubbing the meringue between your fingers.
Transfer the meringue to a piping bag fitted with a large round piping tip.

Pipe a large round ball of meringue to act as the base of the snowman. Make 12 bases on the prepared baking sheet.
Pipe a second round ball on top of the first, slightly smaller. Repeat across the rest of the white bases.
Lastly, create a small round ball on top for the head of the snowman.

Break pieces of pretzel sticks to act as the arms and press into the sides of the middle round of the snowman.
Place 1 M&M in the middle and one in the bottom round of the snowman for its buttons.
Cut a candy corn in half and place in the center of the face for the nose.

Complete all the snowman accessories except the eyes before placing in the oven for 1 hour.
After it bakes for an hour, turn off the oven and let sit and cool in the oven for another hour.
Place the mini chocolate chips on the face as eyes, using any leftover meringue (or a bit of melted chocolate) as the glue between the eye and baked meringue cookie.
