S’mores Bundt Cake Recipe

While a good old-fashioned s’more needs no reinventing, sometimes it’s fun to play up a classic and serve it in a completely different way!

This S’mores Bundt Cake would be perfect for a party or BBQ where it may be impractical to make real s’mores. You still get all of those s’mores flavors (chocolate, marshmallow and a bit of graham cracker) without the sticky job of roasting and assembling s’more after s’more for s’mores-hungry children.

At first I was just going to add a glaze to this bundt cake and sprinkle mini marshmallows, chocolate chips and crushed graham crackers over top, but it wasn’t looking as cute as I’d like.

Adding some melty marshmallow topping transforms this cake into a show-stopping piece that will leave your guests oohing and aahing… and itching to dig a fork into their own slice of S’mores heaven.

While I made my chocolate cake from scratch, I don’t think there’s a huge flavor loss in using a boxed chocolate cake mix. The real flavor makers are that gooey marshmallow “frosting” and all those fun s’mores-inspired toppings. (You could even use a store-bought chocolate bundt cake and dress it up – I won’t tell!)

Smores Cake Ingredients

  • 2 cups flour
  • 1 1/2 cups white sugar
  • 1 cup unsweetened cocoa powder
  • 1/2 Tablespoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup buttermilk 
  • 3/4 cup hot water (not boiling)
  • 1/4 cup oil of choice
  • 1 teaspoon vanilla extract

For the Cake Toppings:

  • 1 jar Marshmallow topping (like Fluff)
  • 1 bar milk chocolate, chopped
  • 1/4 cup mini chocolate chips
  • 1/4 cup mini marshmallows
  • 2 Tablespoons graham cracker crumbs

Tip: if desired, swap out our from-scratch chocolate cake with a boxed chocolate cake. The real hero here are those s’mores toppings!

Tip #2: I just use powdered buttermilk so I don’t have to keep fresh buttermilk on hand or buy it for a single recipe.

How to Make a Smores Cake

Preheat oven to 350F

Grease and flour a bundt cake pan and set aside.

In a large bowl, combine the flour, sugar, cocoa, baking soda, baking powder, and salt. Make a well in the center of these dry ingredients.

In the well of the dry ingredients, add the eggs, buttermilk, hot water, oil, and vanilla extract. Use an electric mixer to combine for 2 minutes, until fully incorporated.

Scrape the batter out of the bowl into the bundt cake pan.

Bake for 25-30 minutes, until an inserted toothpick or cake tester comes out clean and the cake bounces back when tapped.

Cool the cake for 5 minutes in the pan before flipping over to release from the cake pan. 

You can apply the marshmallow topping while the cake is still warm, but I like to wait until it has cooled so that the other toppings don’t melt.

Melt the marshmallow topping according to the package directions, then allow to cool to the point where it is still “melty” but not hot.

Use an offset spatula to spread the marshmallow topping onto the cake.

Sprinkle on the cake toppings.

Let the marshmallow topping cool before serving.
