Rotisserie Seasoning Recipe
Rotisserie chicken is one of those old reliables that everyone in my family enjoys and it’s awesome for making flavorful leftovers (like our Crockpot Rotisserie Chicken Soup.)
However, most store bought versions are super heavy on the salt and the last couple that we purchased were kind of greasy, so I decided to figure out a homemade rotisserie seasoning blend and try out the Rotisserie setting on my Instant Pot Air Fryer.
This Rotisserie seasoning blend is absolute perfection. It imparts the same “little bit smoky, little bit spicy” flavor profile, but you can control the sodium. No more feeling like a swollen up balloon after enjoying some rotisserie chicken!
We add this seasoning to everything – chicken quarters, roasted potatoes, as a fun twist on taco meat, etc. It is so versatile and it’s super quick to whip up if we run out.
The best cost savings with this recipe is to purchase your spices from a bulk store, or if that’s not an option, buy the large containers of the individual spices and herbs. Buying the little containers to make this seasoning would be crazy expensive (but ironically, still cheaper than using the seasoning packets).
This homemade rotisserie seasoning is shelf-stable for up to a year, as long as you use fresh (dried) herbs and spices when you make it and store in a cool, dry spot in your kitchen.
This seasoning is gluten-free, paleo, low-carb and vegan and makes a great homemade gift.
What is rotisserie seasoning? Our rotisserie seasoning is made with salt, white and black pepper, garlic powder, onion powder, sweet and smoked paprika, cayenne pepper and thyme.
Is rotisserie seasoning spicy? That is completely up to you! Rotisserie seasoning should definitely add some warmth and flavor, but is generally not spicy. Increase the cayenne pepper and smoked paprika to increase the heat.

- 1 1/2 Tablespoon salt
- 1 teaspoon white pepper
- 1 teaspoon black pepper
- 1 1/2 Tablespoons garlic powder
- 1 Tablespoon onion powder
- 1 Tablespoon sweet paprika
- 1 Tablespoon smoked paprika
- 1/2 teaspoon cayenne
- 1 teaspoon thyme
