You say to discard the peaches and cinnamon but then you put some in the jars. Are these different ones than the ones you cooked?

You can use vodka or everclear in this recipe, I didn't indicate it in this recipe but in my other "moonshine" recipes I instruct to use everclear if you want a strong vodka that will be used solely as a mix. Using a regular-proof vodka will give you more versatility and result in a more drinkable vodka.

You mention everclear in your instructions, but not in the ingredient list. How much? Or is the vodka substituted for the everclear?
