I love coming up with fun twists on our no-cook fudge recipe and with Spring finally here I thought a pretty No-Cook Rainbow Fudge recipe would be a cute and easy dessert to make with the kids.

No-Cook Rainbow Fudge Recipe, a delicious St Patrick's Day dessert idea or addition to a rainbow party

No Cook Rainbow Fudge Recipe

I first shared this Rainbow Fudge recipe on my friend’s blog, Amanda’s Cookin’.

This rainbow fudge is a cute addition to almost any party – especially a Unicorn or Rainbow theme – or as a special dessert at a baby shower for a rainbow baby.

My kids got to enjoy it for Saint Patrick’s Day, but really, when are kids not excited to eat rainbow-colored treats?!

This recipe uses a microwave rather than the stovetop so it’s easy to let the kids help – and they can give it out for a classroom treat, too!

There are two ways that you can make this rainbow fudge – with color candy melts or adding dye to white chocolate chips.

We tried it a couple different ways and I like a mix – adding 2-3 candy melts per 1/2 cup of white chocolate chips. It’s easier than using food dye to get those vibrant colors, but it tastes better than a fudge made only with candy melts. (The kids didn’t mind the candy-melt only fudge, though.)

Tip: You can simply use red, yellow and blue candy melts and mix to make the secondary colors if you don’t have the different colors on hand already OR use candy coloring to dye white candy melts.

Kitchen Tools You May Find Helpful

  • Measuring cups and spoons
  • Microwave-safe bowls
  • Casserole dish or loaf pan <– I love these Pyrex dishes with fitted lids for easy transportation to parties or leftover storage
  • Rubber spatula <– I like these spatulas because they are one solid piece and don’t have removable heads for bacteria to get trapped underneath. Plus they are heat-resistant and have a lifetime warranty.
  • Sharp kitchen knife

How to Make a No-Cook Rainbow Fudge

Line a loaf pan with parchment paper and set aside.

Place your red candy melts along with 1/2 cup white chocolate chips in a small microwavable bowl along with 2 Tablespoons of sweetened condensed milk.

Heat in the microwave for 25 seconds, stir well, and reheat as needed to achieve a smooth texture.

Pour the red fudge mixture into the bottom of the loaf pan and smooth down to an even layer with the back of a spoon or an offset spatula.

Place the fudge in the fridge for at least an hour, until set and solid to the touch.

Repeat process with the orange candy melts, then the yellow, green, blue, and ending with the purple. (You can mix primary colors of candy melts to get the secondary colors.)

When all layers are added and set, pop the fudge out of the loaf pan and pull off the paper.

Use a sharp kitchen knife to cut into squares and serve.
