Hi MD,
I’m so sorry you ran into issues. I’m thinking that something was off with the wet vs dry ingredient ratio, possibly due to the coconut oil or using a very thick mango puree? You also want to avoid overmixing the batter as that result in a very dense cake. I’ve since added a video which shows what the batter should look like at every stage which will hopefully help fix the issue in future.

We also replaced the mango in the icing for passion fruit.
We found them to be incredibly tasty and amazing.
I found the cupcakes more successful only because the cake didn’t hold up to being a slice. Stored in Tupperware, as a slice, it flattened and mushed.

It wasn’t fluffy, it felt too dense. Also the batter didn’t melt well enough to take the shape of the liners. The uneveness remained. Any idea why this happened?
