Greek Lemon Olive Oil Salad Dressing Recipe

This lemon olive oil salad dressing is a traditional greek dressing called “latholemono.”

It’s not just used for salads; it makes a wonderful finishing touch on chicken, seafood or lamb and is delicious drizzled over roasted veggies or a cooked grain (swap it out for the dressing in our chickpea quinoa salad). It could even be a dip for bread – and I personally love dipping steamed artichoke leaves in it.

So much versatility in a dressing that takes less than 5 minutes to whip up! Quick, easy, versatile, made with only 5 ingredients and absolutely delicious – what more could you ask for?

I make this easy lemon salad dressing on repeat through the summer months but it’s a great way to liven up salads and proteins year-round. It’s zippy, fresh and vibrant with the perfect amount of sourness and tang.

This lemon salad dressing recipe is from the fabulous cookbook It’s All Greek to Me, which I’ve previously shared a spanakopita (Greek spinach pie recipe) from.

Variations for Lemon Olive Oil Dressing:

  • add a touch of honey for sweetness
  • add homemade Greek seasoning for a more robust flavor
  • add dijon mustard for a creamier dressing
  • add red pepper flakes for a touch of heat
  • add a white balsamic or white wine vinegar for more acidity

Does lemon olive oil dressing need to be refrigerated? Yes, while olive oil doesn’t need to be refrigerated, after this salad dressing is emulsified it needs to be refrigerated for best flavor.

Store the dressing in an airtight container in the fridge for up to two weeks.

In a small bowl, whisk the lemon juice, salt, pepper, and garlic (if using).

Ingredients

  • 4 to 6 tablespoons freshly squeezed lemon juice
  • (2 to 3 lemons), depending on how tangy you like it
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon freshly ground black pepper, or to taste
  • 1 clove garlic, minced (optional)
  • 1/2 cup extra-virgin olive oil

Instructions

  1. In a small bowl, whisk the lemon juice, salt, pepper, and garlic (if using).
  2. Then very slowly drizzle in the olive oil, whisking constantly to emulsify.
