Hi Jessica,
I would assume it's just the temperature of your coconut oil when adding to the recipe versus the temperature that it's stored at. (My house lay-out is that my kitchen where the coconut oil is stored is next to our "main" bathroom so the liquidity of the coconut oil doesn't change drastically.)
If you just scoop a tablespoon of the sugar scrub and mix with water before using, it shouldn't cause any issues, but if it's so solid that it's hard to grab a small scoop, then I would remix with a couple tablespoons of coconut oil to get the right texture. The scrub will still work effectively if mixed with a bit of water just before using.

Hi Vanessa,
Sorry for missing your comment until now. This sugar scrub lasts for a few months, but I wouldn't make it more than 2 weeks before gifting so that the receiver can get the most use out of it.

We tend to go through at least one a month between my daughter using it occasionally and me using it every time I shave my legs. My research says it could potentially last up to 6 months as long as you are careful about not getting any unfiltered water in the jar.

It really depends on whether you are able to keep water out of the jar. I usually go through one jar a month, but my research says that you can keep this safely for 6 months - but if unfiltered water gets it, that will make it go bad quicker.
