I made this cheesecake last night. My IP doesn't have a 2" mark. It would have been too deep for the IP trivet if I used 2" of water. I looked up other IP cheesecake recipes. 1 1/2 cups water was used in several so that was what I used. Came out beautiful. Also, other recipe I used before had you covered cheesecake. This one didn't. I gently soaked up liquid off surface and from bottom of pan after cooking. I cooked it according to directions in this recipe. It never set up in the center. Got it out of frig this morning and still not setup in center. Hope it's safe to eat. That it is cooked enough. It tastes great. Just bummed it isn't solid in center.

In reply to <a href="https://sugarspiceandglitter.com/instant-pot-gingerbread-cheesecake/comment-page-1/#comment-593485">Kristen</a>.

I'm curious what trivet you used, as the trivet that came with my Instant Pot is just slightly over 2" tall, so filling the water to 2" should not be touching the pan.
I'm sorry that you had a bad experience, I'm going to amend the recipe to clearly indicate that the cheesecake pan should NOT be touching the water, in case the trivet size has changed.

I tried making this recipe as my first cheesecake in an instant pot. It was a disaster and had to be tossed! My IP didn't have a 2" mark inside but I used a ruler to fill it to 2". I set the spring form pan on top of the trivet and it floated in the water, which maybe should have been my first indication it was not going to work. when the cooking and release were done it definitely looked like it was coming out of the pan so i didn't panic. But it actually WAS coming out of the pan; tipping sideways, with the water in the pot full of filling and not much but wet goopy crust and half an oozy cheesecake in the pan itself. Not sure where I went wrong since I wrapped the bottom in foil and followed every step exactly.

Not sure I will ever try another cheesecake in the Instant Pot. It was a costly lesson in time and ingredients.

Omg, I just wanna sink my teeth into this tender gingerbread cheesecake! Great job! Your recipe seems like a total life saver. All of the ingredients really work together. My husband and kiddos love to have cheesecake for dessert, but I rarely feel like making it. Now I’m so eager to give your recipe a try. Hope all of your useful recommendations will help me avoid mistakes. Dying to taste the result. I’ll probably make this next weekend and share with our neighbors. Gonna follow your recipe precisely. Wish me luck Jennifer!
Thank you for suggesting this idea! I’m so happy to have come across your site. I love it so much!
p.s. Jennifer, I’d be grateful if you’d share with me a few similar recipes for nice cheesecakes. Can I find anything like this on your blog?
