Recently I had a few friends over and we just had a fun evening of mixing fun Halloween cocktails and this Vampire’s Kiss Cocktail really stood out as a crowd favourite so I had to get it out to you before the holiday!

Halloween Champagne Cocktail

This pretty pink champagne is a play on a classic cosmopolitan – you know, the drink made famous on Sex and the City.

A classic cosmopolitan is basically a vodka martini with a hit of cranberry juice and lime. Or more precisely:

If you’ve never had a classic cosmo, you’re missing out! Just try to get it made with real cranberry juice to avoid the sugar high that comes with “blends.”

As for our Vampire’s Kiss Cocktail, it is a tart and efferescent cocktail with a dry finish that leaves you wanting more. The color makes this cocktail look sweet when really, it’s anything but! (Just like a real vampire, no?)

PS – am I missing out having never watched or read the Twilight series? I’m a big Harry Potter nut but I was never really intrigued by the whole teen vampire phenomenon.

I also tried making this cocktail with a homemade cranberry simple syrup but my friends and I agreed that it was waaaay too sweet for our tastes. I like dry champagne so adding sweetness kind of ruins it for me. (The cranberry ginger ale is fine because it brings in that crispness of the ginger and the lime helps cut the sweetness.)

But if you think sweeter is better, you can make your own cranberry simple syrup by combing 1/2 cup of cranberries with 1 cup of water and 1 cup of sugar in a saucepan over medium heat. Cook until the mixture is reduced by half and has taken on a pink color from the cranberries – remove the skins and then keep the cranberry simple syrup in the fridge until it’s time to use it. Add just a teaspoon at a time until you reach your desired sweetness.

How to Make a Vampire’s Kiss Champagne Cocktail

To line the glass with the “blood drips” mix the corn syrup with the pink food dye.

Use a spoon to drip the corn syrup down the inside edge of the glass. You can freeze the glasses to prevent the syrup from running but I like the really drippy effect rather than just keeping it on the edge.

Place the vodka and lime juice in the bottom of your champagne flute and top with pink champagne. Let the bubbles fizz out and then fill to the edge with cranberry ginge rale.

If serving with dry ice, pop a small pebble-sized piece in each glass and be sure to instruct your guests to wait until it is done bubbling out before imbibing.

Ingredients

  • ½ oz vodka
  • 3 oz pink champagne
  • Cranberry ginger ale, to taste
  • ½ oz lemon or lime juice
  • Pink food dye, optional
  • Corn syrup, optional

Instructions

  1. Spooky and very pretty! It remided me of a cocktail I had on my 19th birthday when I went to a sort of “vampire club” with my friends. None of us was dressed for the place, we looked totally out of context, but I loooved the atmosphere and the bloody cocktails we got there 😀
