Last week, I shared our kid-made Strawberry Mint Lemonade so I thought it was only fitting that I share a Strawberry Mint Mojito Recipe for the grown-ups this week!

Mojitos are one of those drinks that is all about balance. The tartness of the lime juice, the sweetness of the sugar or simple syrup, the cool and earthy flavor of the mint, and then the kick of rum – when you get those things perfectly balanced, you’ll understand the beautiful simplicity of the mojito. However, skip the sugar, or go too light with the lime, and it just won’t be quite as satisfying. I personally love mint in my mojitos and mojitos without mint just don’t hit the same spot for me, but I guess that might be optional.

For this mojito, I used our homemade strawberry simple syrup – but you could simply add strawberries to your drink and use plain store-bought simple syrup. (Just whatever you do, don’t use the same syrup your kids use to add strawberry flavor to their milk! Yuck!)

You will need a muddler and cocktail strainer to make this recipe.

How to Make a Strawberry Mint Mojito

  • 1 ounce strawberry simple syrup (recipe below)
  • 4 mint leaves
  • 1 ounce lime juice
  • 2 ounces light rum
  • 3-4 ounces club soda or soda water
  • 2-3 strawberries, sliced for garnish

Place the simple syrup, mint, and lime juice in a cocktail shaker and muddle with a spoon or proper muddler. Add the rum and give it a good shake.

Fill a glass with the ice and strawberries, and then strain the mojito into the glass.

Garnish with additional mint and strawberries to serve.

(Double the recipe to make two servings.)

How to Make Homemade Strawberry Simple Syrup

  • 2 cups water
  • 2 cup sugar
  • 6 large strawberries, chopped
  • Zest of one lemon

Boil the strawberries in the water, until the red colour has left the strawberries. Strain out the strawberries but avoid the temptation to squish them to extract more flavor – this will result in a cloudy syrup.

Add the sugar and lemon zest to the red water and bring to a boil over medium-high heat.

Reduce to simmer until the liquid is halved and resembles a thick syrup.

Cool & store in a glass jar or container in the fridge.
