PSL season is here and today we have a delicious duo of fall-inspired cookies to pair with it. Spiced Vanilla Butter Cookies with two delicious filling options – pumpkin butter and apple butter.

Thanks to my pumpkin spice-obsessed daughter, you can expect at least one pumpkin spice recipe on my site each week. However, for those of you who prefer your pumpkin spice in drink form and not in your desserts, today is for you!

I have painstakingly perfected this butter cookie recipe over countless experimental batches. I have tried other butter cookie recipes that were too crumbly or spread out too much and burnt during baking.

And super technical recipes aren’t really a good fit for my family either because I like to let my daughter help me bake so I need to plan for little spills and tastes throughout the baking process.

However, this butter cookie recipe rises above them all and was worth the wait!

It is so incredibly easy to make, turns out perfect every time, and can be tweaked with flavor additions. It’s also sturdy enough to turn into sandwich cookies, which is perfect for today’s project.

 

I had bought a 6 pack of Starbucks® Pumpkin Spice Caffè Latte K-Cup® pods at ShopRite for a playdate that I was hosting, and I wanted a perfect fall cookie to pair with the easy lattes. Spicing up my vanilla butter cookies and then sandwiching them together using a bit of apple butter or pumpkin butter was the perfect afternoon treat.

To give you the run-down on these Pumpkin Spice Caffè Lattes, they come as two pieces – the K-cup® and a pumpkin spice packet.

You simply empty the spice packet into your mug and then proceed as normal, loading your K-cup® into the machine and filling up the rest of the mug. (It was a perfect fit!) Then, stir it up to fully incorporate the pumpkin spice.

The result is absolutely perfect. Real pumpkin and the perfect balance of spices in a creamy coffee. You don’t have to do anything else – it is perfect right out of the pod!

Ingredients for Spiced Vanilla Butter Cookies

 

Kitchen Tools You May Find Helpful

  • Electric mixer
  • Mixing bowl
  • Measuring cups and spoons
  • Cookie sheet
  • Cooling racks

How to Make Spiced Vanilla Butter Cookies

In a large mixing bowl, beat butter and granulated sugar until light and fluffy, about 2 minutes.

Add the salt, egg, vanilla and pumpkin spice, then gradually beat in flour until well incorporated.

Refrigerate 1 hour.

Preheat oven to 350°F.

Shape dough into 1″ balls and place on ungreased baking sheets.

Dip a fork or the bottom of a measuring cup in confectioners’ sugar and use to flatten cookies.

Bake 10-12 minutes or until lightly browned around edges.

Cool on baking sheets 1 minute before removing to wire racks to cool completely.

Once completely cool, spread apple butter or pumpkin butter on flat side of half of the cookies and then sandwich with the other half.

Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 pinch salt
  • 1 egg
  • 1 teaspoon pumpkin spice
  • 1 teaspoon vanilla extract
