Orange Poppy Seed Salad Dressing

Believe it or not, my family doesn’t just exist on fancy cakes and pizza sliders alone… but I’ll admit, those things are so much more fun for me to share!

This month, I’m making a concentrated effort to share with you some of our family’s favorite healthy meals and snacks – from crave-worthy salads to delicious vegetables the kids will actually want seconds of!

First up is this delicious and creamy Orange Poppyseed salad dressing which transforms a bowl of otherwise boring spinach into a decadent lunch you can feel great about!

Now that the warm weather is here, a salad for lunch actually sounds appetizing – whether you go for a hearty option with grilled chicken and quinoa, or keep it light with a handful of fresh vegetables. There is nothing better than wanting to make a healthy choice and then feeling completely satiated and indulged by it!

If you’re enjoying this orange poppyseed dressing on a large salad, just two tablespoons are 154 calories – most of that being the healthy olive oil which helps your body absorb the nutrients in your vegetables, following by the optional honey and omega-3 rich poppy seeds.

This creamy citrus-based salad dressing can be made with lemon juice or lime juice, depending on what kind of salad you plan on serving it with. A lemon poppyseed salad dressing would be delicious on a pasta salad, while a lime poppyseed dressing would be great with blueberries, quinoa and chicken. This is a versatile recipe that you can tweak as much as you’d like!
