Last week, my daycare kids and I were all about pumpkins – making these delicious Pudding Mix Pumpkin Spice Cookies to enjoy while reading some of our favourite pumpkin books.

I’ve mentioned before that Ella is a huge fan of pumpkin and pumpkin spice, while I’m a little more selective. There’s a handful of pumpkin spice treats that I like, but for the most part I prefer pumpkin in savoury dishes and just plain cinnamon to pumpkin spice. However, I’ve had to develop some pumpkin spice recipes that work for both of us to keep my little chef happy.

These chewy and lightly spiced pumpkin spice cookies hit the mark for both of us – they are pleasant and well-balanced, while providing a delicious mash-up of classic fall flavours.

How to make a delicious pumpkin spice cookie with pudding mix

These cookies have two surprising “secret ingredients”: pudding mix and crushed OREO cookies (though you could use any cinnamon or vanilla cookie in it’s place).

The kids had so much fun measuring, pouring, and mixing the ingredients together for this delicious pudding mix cookie recipe, and it was such a treat for them to indulge in a cookie while we read some classic pumpkin stories, like Cinderella or 5 Little Pumpkins (our Virtual Book Club’s selection of the week).

How to make a delicious pumpkin spice cookie with pudding mix

Ingredients for Pumpkin Spice Cookies with Kids

First, gather your ingredients:

  • 12 ounces cinnamon cookies, crushed *see note
  • 1 3/4 cup Butter, melted
  • 2 ½ cups Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 cup Sugar
  • 1-3.4oz package of Pumpkin Spice Pudding Mix *see note
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 1 cup White Chocolate Chips
  • 1/2 cup cinnamon chips

Note: If you cannot find cinnamon cookies, you can substitute vanilla cookies with 2 teaspoons cinnamon. If you cannot find Pumpkin Spice Pudding Mix, substitute with vanilla or butterscotch pudding mix and add 1 1/2 teaspoons pumpkin spice blend (check out our recipe for homemade pumpkin spice blend here).

Note 2: if you use cinnamon OREOS like we did, use only 1 cup of butter in the recipe. 

 

How to Make Pumpkin Spice Cookies with Kids

Preheat your oven to 350F

Line a baking sheet with parchment paper or a silicone baking mat.

Stir together the flour, baking soda, salt, sugar, and pudding mix.

Crush your cinnamon cookies in a food processor.

Mix the cinnamon cookies in with the other dry ingredients.

Mix in the eggs, butter, and the vanilla extract.

Kids will love helping to make this easy pumpkin spice cookie recipe

Using a cookie scoop or large spoon (my kids have an easier time with the spoon), portion out your cookies onto your prepared baking sheet. (Generous 1.5 tablespoons)

Bake the cookies at 350 degrees for about 12-15 minutes, until golden and set.

  1. Questions about recipe? It says to preheat oven to 400F but bake at 350F. I’ve never seen this in a recipe, is it a typo or must I lower the oven temp to 350F after it preheats? Also, it says to mix in the “remaining” cup of butter but I never say what to to do with the other 3/4 cup? And is it showing the butter melted? Thank you ☺

      Thank you sooo much for catching that. I adapted this recipe from my Banana Pudding Cookie Bars and didn’t fix the discrepancies adequately. ( https://sugarspiceandglitter.com/banana-pudding-bars/ )

      350F is the correct temperature for preheating and cooking.
      If you are using cinnamon wafer cookies, use 1 3/4 cups of butter – if you are using cinnamon OREOS as I did, use only 1 cup of butter as the frosting in the OREOS adds enough moisture for binding the cookies together.
