Three years ago, Ella and I had a sweet little park picnic with a good friend and her daughter. I have no memory of what I brought to the picnic, but my friend brought two revolutionary picnic foods: a mason jar salad and no-bake energy bites.

When given the challenge this month of developing a cookie recipe that would be perfect for a picnic, I immediately thought of those delicious and satisfying cookie bites, and I set out to make my own – with a twist!

Of course, I had to add some Nutella to my version. I’ll go ahead and blame my quarter-Italian genetic make-up for that one, but really, Nutella needs no justification.

To appease the healthy eaters among us, I also used a no-sugar, natural peanut butter in this recipe to serve as a binding ingredient, so we’re just using enough Nutella to get that great chocolate-hazelnut flavour.

These Nutella Energy Bites are an easy no-bake cookie recipe for the kids to help with — simply stir the ingredients together with a wooden spoon, roll out balls of the “dough,” refrigerate, and serve.

I like to add a sprinkle of sea salt onto a few of these energy cookie bites, just like with my Brown Butter Chocolate Chip Cookies. (And my double chocolate chip cookies… and tofu chocolate chip cookies… Come to think of it, I’m pretty sure everything tastes better with a sprinkle of sea salt.)

Kids’ Kitchen: Nutella Energy Bites

Ingredients

  • 1 cup quick-cook or rolled oats
  • ¼ cup natural peanut butter
  • ¼ cup Nutella
  • 2 Tablespoons coconut oil, not melted
  • 1 Tablespoon honey
  • 2 Tablespoons flax seeds (optional)
  • 1 ounce dark chocolate (optional)
  • 1 teaspoon sea salt (optional)

Instructions

  1. In a medium sized bowl combine all ingredients except for the dark chocolate.
  2. Stir with wooden spoon until well combined.
  3. Roll tablespoon (bite-sized) balls of the mixture with your hands. (Kids love this step!)
  4. Refrigerate cookie balls for 10-20 minutes to set the mixture and firm up the texture.
  5. Optionally: Melt the chocolate square in microwave in 20-30 second increments, and drizzle on top of balls using a spoon. (If using sea salt, sprinkle it on now.) Let the chocolate set before packaging.

  1. What I love most about this (aside from the use of Nutella) is the fact that it takes little to no effort to make at all. There’s no baking or pre-heating ovents, it’s very simple, but very yummy as well. My kind of recipe. I’ve pinned and saved this to try soon. Thanks so much for sharing it with us, Jennifer.   5. Wow. Perfect recipe for a hot summer day. I omitted the sea salt and used baby chocolate chip instead of the dark chocolate. It is really yummy and super easy. Great way to use oatmeal instead of flour.
