One of our favourite summer dessert recipes is this easy apple blackberry crumble, which can be made in the oven or the microwave.

Bursting with summer flavours and a perfect contrast of crunchy crumble and juicy fruits, this is the perfect kids kitchen recipe if you’re short on time or just starting to involve the kids in the kitchen.

This has got to be one of my favourite easy summer desserts. While we normally make ours in the oven, it’s wonderful to have the option to cook it in the microwave on those days when you want to make a delicious dessert, but it’s way too hot to turn on the oven.

Served warm, it’s also a comforting option during cold weather, and you can substitute the apples and blackberries for whichever fruit is in season. I wouldn’t hesitate to even do a medley of different fruits and berries that you need to use up around the kitchen.

We topped our apple blackberry crumble with some imported clotted cream (a staple in our house during the summer months – especially for recipes like our strawberry shortcake), but homemade whipped cream or a simple no-churn ice cream would be a wonderful alternative.

Start by setting out an apple cutting invitation, with either a crinkle cutter, apple segment cutter, or both. Place the cut apple pieces in a your baking dish.

Wash the blackberries using a child-sized colander with handle, and add them to the bowl with the apple pieces.

Whisk the cornstarch into the juice, and pour over the apple medley along with the honey, and stir to blend.

Have the children blend the coconut (or cane) sugar, oats, flour, optional quinoa and nuts, and coconut oil (or butter) with a pastry cutter or fork. Spread evenly over top of the apple-blackberry mixture.

Kids Kitchen: Apple Blackberry Crumble

Ingredients

  • 4 apples, chopped
  • 1 pint blackberries
  • 1/2 cup pomegranate juice
  • 1 teaspoon cornstarch
  • 1/4 cup honey
  • 1/4 cup flour (can use spelt)
  • 1/4 cup hazelnuts, optional, crushed
  • 1 cup rolled oats
  • 1/4 cup coconut sugar or cane sugar
  • 1/4 cup quinoa, optional

Instructions

  1. Preheat your oven to 350 and butter or oil a baking dish.
  2. Cut up the apples and place with the blackberries in your baking dish.
  3. Whisk the cornstarch into the juice, and pour over the apple medley along with the honey, and stir to blend.
  4. Blend the coconut (or cane) sugar, oats, flour, optional quinoa and nuts, and coconut oil (or butter) with a pastry cutter or fork. Spread evenly over top of the apple-blackberry mixture.
  5. Bake for 20 minutes, until the crumble is golden brown and the juice has taken on a syrupy texture, bubbling up over the crumb coating.

    1. Oh I’m sorry – the directions have been deleted somehow. I’ll update it tonight (want to double check) but I think we did it for 18-20 at 325F? I’ll double check and update the directions though
