A staple in my weekly meal prep is making a fresh, homemade salad dressing.
I switch it up every week and try to pick something that will make me excited to have salads throughout the week – because if I don’t crave it, I’ll end up giving into a Dorito craving instead.
For almost a decade now, this super simple apple cider vinaigrette has been on regular rotation. I tend to make it more in the fall, when it serves as a welcome break from the heavy soups and comfort foods that are ubiquitous, but it really is a great option year-round.
For such a simple dressing, it is a flavor workhorse. The sourness of the apple cider vinegar works perfectly to cancel out the bitterness that can be found in many salad greens, while the bright pop of acidity from the vinegars and tanginess of the mustard tantalizes your tastebuds and adds another dimension of flavor to your salad. The sweetness of the honey works perfectly to add a bit of balance, especially for those of us with major sweet tooths!
One of my favorite things about this apple cider vinaigrette is that it doesn’t need to just be used as a salad dressing! It’s also great drizzled on roasted, grilled or sautéed veggies, can be used as a marinade for fish or chicken.
What is apple cider vinaigrette made of? My recipe is made with apple cider vinegar, white wine vinegar, dijon mustard, olive oil, honey, salt and pepper. I include a few variations below so you can taste, experiment, and adjust to your personal preferences.
How long does apple cider vinaigrette last? It can be stored in an airtight container in the fridge for up to two weeks.
Is apple cider vinegar good for you? Using raw apple cider vinegar (which contains “the Mother”) ensures that you are getting all of the healthy enzymes and gut-friendly bacteria, as they haven’t been cooked off during the pasteurization process. Apple cider vinegar may:
- help with blood sugar control
- help lower cholesterol levels and blood sugar levels
- aid in digestion and rebuilding gut-health
Apple Cider Vinaigrette Variations:
- infuse herbs like rosemary in the dressing by combining the olive oil and rosemary in a jar overnight (or up to a week). When ready to make your dressing, discard the rosemary and use the infused olive oil in place of the plain olive oil called for in the recipe
- add fresh garlic or garlic salt for a hit of sharp acidity
- swap out the white wine vinegar for balsamic vinegar or lemon juice
- mash up raspberries, blackberries or cranberries and add to the dressing for a punch of fruity flavor

- Apple Cider Vinegar
- White Wine Vinegar
- Dijon Mustard
- Extra Virgin Olive Oil

How to Make Apple Cider Vinaigrette
If using a bowl, combine the vinegars, mustard and honey. Whisk in the olive oil to help emulsify the dressing. Season to taste with salt and pepper.
If using a smoothie-style blender, add all ingredients to the blender and blitz until combined.
Store the dressing in the fridge in a sealed mason jar or re-purposed salad dressing bottle for up to two weeks.

- 1 tsp apple cider vinegar
- 1 tsp white wine vinegar

- 1-2 teaspoon honey, to taste
- Salt & Pepper, to taste
Instructions
- If using a bowl, combine the vinegars, mustard and honey. Whisk in the olive oil to help emulsify the dressing. Season to taste with salt and pepper.
- If using a smoothie-style blender or mason jar, add all ingredients to the blender and blitz until combined.
- Store the dressing in the fridge in a sealed mason jar or re-purposed salad dressing bottle for up to two weeks.
