A couple months ago, I first shared my Root Beer Float Cocktail recipe over on Amanda’s Cookin’ and today I’m excited to share it with you all!

The only thing better than a root beer float? A root beer float cocktail made with butterscotch schnapps! This is my new go-to summer cocktail drink

Root beer floats are one of those classic drinks that are perfect for a cozy night in, and since you’re staying in anyways, why not take them up a notch with an ounce of schnapps! Butterscotch Schnapps is one of my favorites to keep on hand, even to just mix with apple juice for a lazy Caramel Apple Cocktail.

This Root Beer Float Cocktail is a frothy combination of vanilla ice cream and cold root beer that perfectly melt together to create a caramelized vanilla malt with just the slightest bitter bite.

I’ve tried this recipe with different alcohols – vanilla vodka, dark rum, tequila – but I love how the butterscotch schnapps brings out the caramel notes in the root beer and compliments the vanilla ice cream beautifully. My second favorite way was with the extra “kick” the tequila option had.

Tip: I often order my liquor from Drizly because they have a quick delivery time (sometimes within 40 minutes) and no expensive mark-ups. Purchasing from them supports local retailers, too. You can order the Butterscotch Schnapps needed for this recipe from them.
