A couple months ago, I first shared my Root Beer Float Cocktail recipe over on Amanda’s Cookin’ and today I’m excited to share it with you all!
Root beer floats are one of those classic drinks that are perfect for a cozy night in, and since you’re staying in anyways, why not take them up a notch with an ounce of schnapps! Butterscotch Schnapps is one of my favorites to keep on hand, even to just mix with apple juice for a lazy Caramel Apple Cocktail.
This Root Beer Float Cocktail is a frothy combination of vanilla ice cream and cold root beer that perfectly melt together to create a caramelized vanilla malt with just the slightest bitter bite.
I’ve tried this recipe with different alcohols – vanilla vodka, dark rum, tequila – but I love how the butterscotch schnapps brings out the caramel notes in the root beer and compliments the vanilla ice cream beautifully. My second favorite way was with the extra “kick” the tequila option had.
How to Make a Root Beer Float Cocktail
FOR ONE COCKTAIL YOU WILL NEED:
- 3/4 cup root beer, separated
- 2 oz butterscotch schnapps
- 1 generous scoop vanilla ice cream
- Maraschino cherries, optional
Pour half of the root beer into the mug then add vanilla ice cream. Pour the butterscotch schnapps over the top of the ice cream then top with remaining root beer. Adding root beer at the end will help create foam.
Top with cherries and serve with a fun, colorful straw.
One 12-ounce can of root beer makes 2 perfect root beer float cocktails.
