One of my kids’ favorite treats when summertime gets here is having an ice pop in the backyard – so, what better way to ring in summer than with our very own Fruity Summer Popsicle Party!

The perfect low-key summer party, or a fun summer playdate - host your own fruity summer popsicle party to keep the kids cool this summer.

While we do like making our own homemade ice pops when the mood strikes, I was really excited to discover Outshine® Bars on a recent trip to Walmart – made with real fruit, veggies or juice, and completely free of GMO, artificial colors and flavors, and high fructose corn syrup. (They are also gluten-free and fat-free if those are a concern.)

We bought three varieties for our popsicle party to provide a lot of variety, but I was the most excited about the Fruit and Veggie Variety Pack – for example, in the “Tropical Banana Medley” the first ingredient is pumpkin juice(!), and also includes pear juice, apple puree, banana juice, banana puree, and cauliflower puree.

I also grabbed some easy decorations – ribbons, paper fans, a polka dot table cloth and a cute lawn sign – and fun mix-ins for the kids to dip their fruit bars and yogurt bars into.

Miss V helped stock our ice cream cart with the fruit bars and yogurt bars. She couldn’t get over how silly it was to be using our pretend play ice cream cart for REAL treats. (Afterwards, I stuck some frozen ice packs in with the bars to prevent melting.)

After curling our ribbons and attaching them to fence along with the paper fans, setting the kids’ picnic table with all the mix-ins and carrying the ice cream cart into the backyard, we were ready to party!

I also found some cute ice pop bubble necklaces as party favors!

The kids all picked out which type of bar they wanted to try – to make things easier, I taped the boxes back up and displayed them on the ice cream cart so they could see what the bars would look like underneath the packaging.

Not surprisingly, every child picked a different bar to try!

After tasting the bars as-is, I explained that if they dipped their cold bars into the mix-ins, they would stick!

The mix-ins I provided were:

  • melted yogurt chips
  • cocoa nibs
  • cherry yogurt
  • sprinkles
  • shredded coconut
  • chocolate pebbles

The process of dipping and tasting the different flavor combinations was the highlight for the kids – they all enthusiastically dipped and tasted until their bars disappeared.

The cocoa nibs were surprisingly a bigger hit than the chocolate pebbles. In retrospect, I wish I had put out some dried fruit as well, but at least there was fruit in the bars!

This was the perfect, low-key summer party- it would be perfect for a summer birthday or even just a summer play date. Have the kids help prepare the mix-ins and decorations according to their age and abilities. After you are done with all the fruit and yogurt bars, you can use the sticks to make bracelets or even engineer some stick houses!
