Festive 10-Minute Eggnog Pancakes
Ella & I are loving finding new ways to enjoy eggnog this winter and what better way to start your morning than with a slow cooker eggnog latte and a stack of these delicious eggnog pancakes!
These eggnog pancakes are slightly thicker than our usual fluffy pancakes, but it really works well with that rich and delicious eggnog flavor.
Between getting out the ingredients and digging in to your own stack of these eggnog pancakes, you’re looking at about 10 minutes – making this the perfect option for a mornings when you’re short on time but still want to enjoy a fun, festive breakfast with the family.
You can also prep the batter the night before and let it sit – or prep it early in the morning and leave it out until you’re ready to cook. This should result in just a slightly fluffier and lighter pancake recipe, which no one is going to complain about!
We bumped up the flavor with additional vanilla, cinnamon and eggnog to make this recipe truly unforgettable. Just do us a favor and enjoy these with real maple syrup and not that fake corn syrup imposter… it would just do these pancakes a complete disservice. (When you know better, you do better – from a concerned Canadian.)
Ingredients for Eggnog Pancakes
- 1½ cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon cinnamon
- 2 eggs
- 4 tablespoons butter, melted
- ¾ cup eggnog
Tip: You can substitute your own favorite pancake recipe and just use the eggnog in place of the water or milk.

How to Make Eggnog Pancakes
Place a frying pan or skillet over medium heat and add a tablespoon of oil or butter to the pan.
In a large bowl, whisk together all dry ingredients.
In a separate bowl, mix eggs, egg nog and butter.
Slowly add wet ingredients to dry ingredients and stir until combined.
Using a 1/4 cup measure, portion out the batter into your pan – about 2-3 pancakes at a time – and flip when the tops begins to bubble and the underside has turned a toasted brown color, about 2 minutes.
Cook for 2 more minutes on the other side and then remove to a warm plate as you repeat with the rest of the batter.
Serve with powdered sugar or maple syrup.

If I make this batter the night before, do I need to let it come to room temperature the next morning or can I start cooking right when I take the batter out of the fridge? I’m excited to try this recipe, but I don’t want to mess anything up lol
Hi Vinta, Yes, you’d want it to come to room temperature – they won’t puff up and will be very dense if the batter is cold when you make it. I hope your family loves them!
