It’s been a couple years since I made my crazy-popular Coconut Lime Cupcakes, so I thought I should add to the Coconut-Lime flavour selections with two new coconut-lime recipes: a Coconut Lime Cream Pie and a Coconut Lime Mint Mojito!

    Coconut Mint Mojito, a refreshing lime coconut mint cocktail perfect for summer parties

I first shared this Coconut Lime Mojito on my friend, Amanda’s blog, Amanda’s Cookin’.

Coconut and lime and an often underrated tropical flavour. Less bright and punchy than tropical citrus flavours, coconut and lime is a refreshing combination for those who want a less overwhelming and more balanced sweetness in their tropical drinks.

Add in some mint and you have a super refreshing cocktail that leaves you feeling cool and quenched! I used dark rum in my version, but you could use a light rum or even a coconut-flavoured rum.

You can swap out the coconut milk for it’s creamier, more indulgent counterpart – coconut cream – or coconut water if you want to shave off some calories. But for the love of cocktails, please don’t use mint extract in place of the real mint – use a mint simple syrup if you have to or just skip the mint entirely. Using real mint gives this cocktail a completely different flavour than the one-dimension, overpowering mint extract would lend it. Real mint or bust!

Homemade Lime Simple Syrup:

Note: to make just enough simple syrup for just this recipe, you will need 1/4 cup water, 1/4 cup sugar and the zest of 1 lime.

How to Make a Coconut Lime Mojito

Place mint in a cocktail shaker and muddle – either with a muddler or the back of a spoon.

Fill with ice and remaining ingredients.

Shake vigorously until drink is well chilled and then strain out into an ice-filled glass.

Adjust to taste with lime juice and garnish with additional mint or lime.

Makes 1.

Ingredients

For the Coconut Mint Mojitos:

  • 1-2 teaspoons lime simple syrup
  • Handful mint (about 8 sprigs)
  • 3 oz rum
  • 1 oz cream of coconut
  • Club soda, to taste
  • Extra lime juice, to taste

For Lime Simple Syrup:

  • 2 cups water
  • 2 cups sugar
  • Zest of 2-3 limes

Instructions

  1. Place mint in a cocktail shaker and muddle - either with a muddler or the back of a spoon.
