Do I actually get to call this a recipe? Because… that feels like cheating. I mean, this Champagne Sorbet Float is amazing and delicious – definitely a must-try that I’m excited to share with you.

But a recipe? I’m not so sure about that…

This is not the first time I’ve decided to have my dessert and cocktail at the same time – if anything, it’s kind of a running theme starting with this Grown-up Root Beer Float, then there was the Apple Pie a la Mode Cocktail… and yup, there’s a Bailey’s Coffee Float coming up soon, too.

But this pairing of slightly bittersweet raspberry sorbet with bubbly, dry champagne is definitely a class unto itself. It presents beautifully at a party and it just has that special something that can only come from a champagne cocktail.

This recipe would work beautifully with lemon sorbet or coconut or vanilla. I don’t usually like raspberry anything, my daughter picked out this sorbet flavor so I thought I’d give it a try – and I loved it. Use your favourite flavour for the best experience.

And of course, this recipe is best enjoyed shortly after making – when the froth and bubbles are fresh. I did sip on one a while after it was made and it was still delicious, but what’s the point in having a champagne float cocktail if you don’t get some bubbles tickling your lip as you sip?

How to Make Champagne Sorbet Float

Scoop the sorbet into your champagne glasses – we used old-fashioned glasses for easier preparation.

Pop the champagne and pour half of a small bottle (approximately 3oz) directly onto the sorbet.

Enjoy immediately.

  • 1 small bottle of champagne (approximately 6oz)
  • 4 scoops raspberry sorbet

Instructions

  1. Scoop the sorbet into your champagne glasses - we used old-fashioned glasses for easier preparation.
  2. Pop the champagne and pour half of a small bottle (approximately 3oz) directly onto the sorbet.
  3. Enjoy immediately.
