BLT Salad with homemade caesar salad dressing and homemade garlic croutons

I first shared this Tomato Caesar Salad on my friend, Amanda’s site.

The last time I ate salads regularly was in university. I found this Asian Sesame dressing that made everything taste wonderful and I would prep a big container of toppings every week to scoop onto lettuce and smother in that dressing. It was delicious and I convinced myself for a long time that it was healthy. It was salad after all.

And to be honest, I still think that anything that allows you to enjoy eating several servings of vegetables and encourages you to actually reach your suggested number of veggie servings per day is never a bad thing. OK, so that particular salad dressing added 4.5 g of (unhealthy) fats and 3g of sugar to each salad – but you know what? I actually ate 2-3 servings of vegetables a day because of that dressing.

Now, I’m more likely to make homemade salad dressings so I can feel good about what’s in them, but I’m still going to enjoy a flavorful salad dressing to make my salad delicious and enjoyable – because a delicious salad makes you crave more delicious salads, and before you know it you’re eating salads on the regular.

This BLT Caesar salad features homemade garlic-y croutons, melt-in-your-mouth shavings of Parmesan cheese, small strips of real bacon and a delicious homemade caesar salad dressing that is seriously restaurant-quality. If you’re looking for some inspiration to start eating salads and getting those daily vegetable requirements, this is the salad you’ve been waiting for.

How to Make Homemade Caesar Salad

Brush 1 Tablespoons of olive oil on each side of the crusty bread (total of 4 Tablespoons) and then sprinkle on 1 minced clove of garlic.

Toast the bread in a frying pan set over medium heat, about 2-3 minutes per side.

Remove from frying pan and add in the bacon, heat until fully cooked.

Meanwhile, in a small bowl, combine 6 Tablespoons of the olive oil, the mayonnaise, 2 minced garlic cloves, anchovies, lemon juice, mustard, Worcestershire, and half of the Parmesan. Taste and season with salt and pepper before adjusting the other ingredients.

Let the dressing flavors meddle as you tear and wash the lettuce, and cut up the cherry tomatoes.

Place all salad components except the dressing in a large bowl and toss.

Add as much dressing to cover the salad, or drizzle on top of the portioned out salad.

Save the remainder of the dressing for future salads.
