Last year we perfected our Apple Breakfast Loaf recipe and this year I wanted to add a couple more delicious apple breakfast recipes to our collection. First up is this amazing Apple Pie Breakfast Cake.

Yes, you read that right. Breakfast. Cake.

Okay, so first – a confession.

I’m not a huge pie person. There, I said it.

For the most part, if I’m offered pie OR virtually any other dessert on the planet, I’m going with the other dessert. While I’ve had a few good pies (including my Foolproof Apple Pie recipe), for the most part I just end up wanting more crust and more toppings (if the crust isn’t burnt from being too thin in the first place). If someone could work on developing thick crust pies that are tender and perfectly cooked – that would be perfect. (And while we’re at it, let’s make a rule that all pie crusts should contain at least real butter, but ideally butter and shortening.)

For this recipe, I decided to take my favorite parts of a traditional apple pie and reimagine them as a cake. A buttery, rich cake made moist by the addition of applesauce, with a delicious crumb topping, freshly baked apples and a drizzle of icing. And I’m calling it a breakfast cake because if coffee cake can be accepted as a perfectly acceptable brunch offering, so should this apple pie cake!

This would be a delicious and show-stopping addition to a weekend brunch, or you can skip the drizzle and cut a slice for an on-the-go weekday breakfast. I really enjoyed having leftover slices of this Apple Pie Cake with a homemade latte in the afternoon -it is a perfect fall treat!

Next time we make this, I’m swapping out the drizzle for some salted caramel sauce but everything else is remaining exactly the same. You could also stir some dried fruit, chopped apple or nuts into the cake batter.

This is a great recipe to have the kids help with as you don’t have to worry about a few lumps in the batter and it’s supposed to look a bit rustic, so you don’t have to worry about keeping things pretty. Ingredients for Apple Pie Cake

  • 2 Eggs
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1/2 cup applesauce
  • 2 1/4 cups flour
  • 1/2 cup oil
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground clove
  • 1 1/2 teaspoon vanilla
  • 1 apple, sliced

For the crumb topping:

  • 1/2 cups all-purpose flour
  • 1/4 cup light-brown sugar
  • 2 Tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/2 cup butter, cold

For the optional Icing Drizzle:

  • 1 cup powdered sugar
  • 2-4 Tablespoons milk

Tip: You can also add some nuts and raisins to the dough before baking.

How to Make Apple Pie Breakfast Cake

Preheat the oven to 350 degrees, grease and flour a 8″ circular pan and set aside.

In a bowl combine the flour, sugars, spices and baking powder.

Form a well in the middle and add the beaten eggs, applesauce, oil and 1/2 teaspoon of the vanilla and mix everything until just combined.

Pour the batter into the prepared cake pan scrapping the sides of the bowl.

Combine the crumb topping ingredients (flour, brown sugar, sugar, salt, cinnamon and butter) and cut with a fork until coarse and crumbly. (The butter should be reduced to about pea-size pieces.)

Sprinkle the crumb topping over the cake, then layer with apple slices and bake for 1 hour or until an inserted toothpick comes out clean.

Whisk together powdered sugar, milk and remaining teaspoon of vanilla. Drizzle the glaze on the apple cake and serve.
