Recently, Ella and I had a family movie night and we decided to go with a strawberry theme! Along with a strawberry-peach salad, I made this crispy Almond-Crusted Chicken with fresh Strawberry Salsa which had a great contrast of textures and flavors.

Coating the chicken in a combination of crushed almonds and Panko breadcrumbs gives it a great crunchy texture without relying on some of the lesser-healthy ways you can achieve a crispy chicken. The almond flavor is subtle, but works nicely with the rosemary and is more likely to pair well with other side dishes than other (oiler) nuts.

Feel free to swap out the strawberry salsa for guacamole, a spicy tomato salsa, maple syrup – whatever you crave with your crispy chicken!

How to Make Almond-Crusted Chicken

To make this recipe, you’ll need:

  • 3 chicken breasts
  • 2 eggs
  • 1/2 cup good-quality breadcrumbs (I like Panko)
  • 1/3 cup almonds, chopped or smashed
  • 1 Tablespoon dried rosemary
  • 3 Tablespoons olive oil
  • Salt and pepper, to taste

Preheat oven to 350F.

To smash up the almonds, I placed them in a plastic zip bag and had Ella smash them up with a rolling pin. You want them to be almost crumb-sized.

Mix the almonds, bread crumbs, rosemary, salt and pepper in a bowl and set aside.

Beat the two eggs together and set aside.

Place the olive oil in a frying pan over medium heat and start coating your chicken breasts as it heats up.

Dip the chicken breasts in the beaten eggs, stirring to coat thoroughly, and then dip into the almond-bread crumb mixture.

Cook over medium heat until both sides of the chicken are browned, and then place on a baking sheet and bake for 10-12 minutes until the chicken reaches an internal temperature of 165F. (Or if you’re using a skillet, just transfer it to the oven.)

How to Make Strawberry Salsa

To make this recipe, you’ll need:

  • 1 cup strawberries
  • 1-2 Tablespoons hot sauce of choice
  • 1/2 small onion
  • Large handful cilantro
  • 2 Tablespoons lime juice
  • Salt and pepper, optional and to taste

Mix all of the strawberry salsa ingredients together and let the flavors mingle. We enjoyed this fresh, but you can enjoy it for days afterwards!

  8. While the chicken is baking, mix all of the strawberry salsa ingredients together and let the flavors marinade. Spoon over the finished almond chicken before serving.
